As a huge ST fan I've always felt that this Enterprise is the best design.
I've done my best to re-create it from scratch. I've used pictures off the internet to put as much detail on as Minecraft PE allows. All work is being done from my iPad Pro and even at it's highest resolution it is difficult to get the whole ship in the picture.
This is a work in progress and is much harder to do than I thought it would be.
Let me know your thoughts and suggestions as I work to complete the exterior (maybe I'll do the interior when outside is complete).
Here's an update flyby of the externals (almost complete):
Apologies for the darkish areas. The new Minecraft update (v1.1.0) is playing havoc with how the lighting is rendered. Hopefully this will be fixed in the next release.

The primary hull structure (walls, floors and doors) is 95% done. Only the "details" (beds, chests, and equipment) need to be added. I'm doing this whole project with the default Minecraft items and skin so I've had to be creative with what would represent various items (sea lanterns for lighting, chests for cabinets, steps for chairs, ladders for turbolifts, Lava for plasma, etc.).
This is the Enterprise with a Minecraft theme. Or this is Minecraft with a Star Trek Enterprise theme. Either way imagination needs to be used to accept this as a starship (made out of stone, glass torches and lava). I hope you enjoy.
....Oh, and yes I did use pictures as display screens and monitors.
