I am currently working on a custom texturing system create a near infinite variety of in game skins for villagers. This will also extend to animals as well.
Also just like the JurassiCraft thread, all animal suggestions are banned. EcoCraft's thread aren't going to be governed any differently than JurassiCraft.
Will there be a food chain? So like fish eat smaller fish, then turtles eat the fish and then the turtle gets eaten by a crocodile or something like that.

Yep! You got the idea. Eventually (Probably not for first release) all animals will live, die, breed within the context of the food chain. Then, we'll have some real minecraft evolution!

To appease everyone running the mod...I highly suggest using google forms to have people make suggestions. It's a really nice and tidy way to have your fans make suggestions. You can have it shared between those working on the mod, and customize it to have the suggestions a little more organized. Used it a lot when I used to do surveys for the school clubs and such.

For now the flood of ideas isn't overwhelming, so it's still okay to post (will probably regret saying this). However this google forms seems like a great idea.
Passing by and thought I'd drop my two cents in as a fan of realism mods on a minor point. There's never been any historical accounts of "studded leather" armor, it's always been a misinterpretation of Brigandine style armor by the creators of Dungeons and Dragons and perpetuated ever since. In reality those studs would be fastening the leather and/or cloth over metal plates and you could expect it to be about as good as any proper breastplate. Things like jack chains or leather armor reinforced with scales in certain areas as the ancient Greeks did would be more historical inspirations.
Currently the texture is a generic one, but form what I've heard it'll be job depenedant
