That is Hunger Overhaul. No plans to move that to AppleCore. However, in the future, it will be easier to pick and choose what you want from Hunger Overhaul (see this and this).

I was able to get around it by editing the icon.png file in the jar file I downloaded; however, some people may not know how to do this. My only critical point of this mod is the garbage texture behind the saturation "meat sticks"
I guess the only question I have is why it is even there in the first place...

A third component of hunger is the food exhaustion level, which effectively tracks fractions of the next hunger or saturation point that will be spent. This value can range between 0.0 and 4.0. OK, I think I'm not being specific enough, it's not your fault. It won't let me take a screenshot, because it only appears when you hold shift over foo There is the food value, the saturation value (gold outline) below that, and below THAT there is sometimes a re and black bar that's very small. It doesn't make sense why it appears randomly and there doesn't seem to be any documentation of it, so that's what I'm asking about.
Ah, yeah, that's a bug that appeared in Minecraft 1.7. No clue why it happens, and have no idea how I would go about fixing it. The same exact code in Minecraft 1.6.4 did not have the issue.

That's a known issue with AppleCore >= 1.2.0, which is not ready yet. Use AppleCore 1.1.0 instead.

Pretty sure that's the "adds food value information to tooltips while holding SHIFT (can be disabled by the client)" feature.
Well, yes, the gold outline is saturation. But above that is a barely-visible bar that only appears sometimes.
