Does this mod have any issues with other mods? I'm using Real World Generation, Biomes o Plenty, Natura and Plant Mega Pack. For some reason I can only ever find grapes or hops in villages, never rice. Also I don't think I've ever seen bamboo from this mod in my world.
Rice can be found when breaking tall grass, not sure about bamboo not generating.

I use it with Highlands with no problems. Villages don't have rice paddies, you'll have to get seeds yourself by breaking tall grass (you can also find your own grapes and hops by breaking vines). As for bamboo, that's naturally fairly rare. Just keep looking, and perhaps raise the spawn rate.

You want a farm, you grab a hoe. You want a boat, you grab some wood. You want a fireplace, you grab A FLAMING HELL-BOULDER BECAUSE THAT'S HOW MINECRAFTERS ROLL!!!
I edited the config so It would spawn in a few BOP biomes, now I see bamboo every now and again. Now the only problem is the little white dots between the bamboo textures.
White dots?

Huh. I'd never noticed those before. (And now I can't unsee them. Gee, thanks.)

Are you meant to have to dig up the area after a rice harvest every time? It turns unhydrated and I can't find a way to re-hydrate without just starting over completely.

Use a water bucket on a paddy to hydrate a 3x3 square, or let water flow over the blocks to get them all at once. I have a rice farm consisting of a tiled 3x3 pattern with one of the edge paddies replaced with a water pool, so I can use the bucket on the center paddy and hydrate them even with grown rice there.

Another method you can use is to have a piston contraption set up to flood the paddies once your rice is ready for harvest. This can serve a double purpose, as it re-hydrates the paddies, and the flood harvests all the rice for you (I can post screenshots if you wanna see how it works)
Also, wondering, do grapes only spread two blocks from the stems now? Because that's as far as they go for me. It's weird.

I know, I had something like that in one of my 1.6.4 worlds (it was easy since that was an underwater base). This design is so that I can rehydrate the paddies without harvesting, for aesthetics.
And yes, grape spread is limited now. Just grow the stalks with four blocks of separation, you can still get 80% of a line covered with fruit-bearing vines. More if you use crossed ropes.

Use Minecraft potatoes to brew and distil Vodka. Add Corn crops for Whiskey, and use minecraft sugar to make molasses for Rum.
And perhaps a way to turn grapes into grape juice as a low/mid tier food.
Most recent word is that Gwafu does not plan to add beverage distillation, so no vodka, whisky, brandy, tequila, etc.

They fill up all the slots with empty combs first, then they start filling them.

Check out my mods! :-)
Personally I'd wait until 1.8.3 but it's probably a small update from 1.8 anyways.

one bug: apple saplings don't fuel the furnace.
also, i'd prefer if apples still on tree wouldn't prevent movement through the block.

Feature suggestion(s)
Perhaps more crops to expand on the cellar mod.

How do you make Rice Paddies? Is there a crafting recipe, or do I have to use a tool?
Right click on a tilled soil block with a shovel.
