Can you be more specific? Because I'm pretty sure that altering the item model won't do this. Enchantments are stored as NBT tags, which I don't think item models can key off of the apart from a few specific instances like tool durability. Can you provide an example of changing the item model based on the book's enchantment?
How can i change the Texture of the enchantmentbooks, that every enchantmentbook (sharpness,protection etc.) has its own texture ?
i need the folder or whereever i can change that.

To the best of my knowledge this can't be done in vanilla Minecraft. And unless KittenKatja can provide an example, I'm going to stick to that assumption. So unless some new information is presented I believe that you need Optifine installed to do something like this. You can find information in the Custom Item Textures doc on the Optifne Github.
