If you have Alex in Pre-2 it's because either you don't have a custom skin, or your custom skin was created for that model. If you want the default steve skin, just download it from Mojang's website (you can download it from the same screen you have to go to to change your skin) and then upload it as your custom skin.
And no, you can't just edit textures in the .jar file. Minecraft will just re-download the fresh jar to prevent tampering, thus eliminating your changes. You need to actually make a resource pack to make changes.

You can't change your default. The entire point of custom skins is so that you can change what you look like and not be default. The default is rarely seen if you have a custom skin, so why does it matter?

That's my understanding of it, yes. I haven't confirmed it, but the system was undoubtedly designed so that players could choose. Only the default is supposed to be dependent on one's UUID.

For that matter, convert your own skin so that you'll see it while you're offline. Just be sure to disable the pack when on a server or it'll look like a lot of newbs ripping you off.

This doesn't seem to work. I've even tried giving myself the default Alex skin and I still don't get thin arms. The weirdest part is that my default is the thin armed model, but as soon as my custom skin loads, it gets the thicker arms.

Weird. I'm sure that there was supposed to be a mechanism that allows you to choose. Otherwise what would be the point in having a different model that only 50% of the player base can see and then only when offline? Seems a bit daft if you ask me.

Edit: About five minutes of poking around has led me to believe that it will be something you can select from your minecraft.net profile once 1.8 officially comes out.

WHAT?! This is ridiculous! An option...on the website? I was more implied toward an in-game toggle, perhaps filling the last space in the skin customization menu. I hope at least this comes as soon as 1.8 comes out, and is not delayed like name changing.

Normally I'd agree with you, but since the texture mapping for the to models doesn't play nice, it wouldn't so much be a "change your model" button as it would be a "break your skin" button. I think that's why it's going to be on the website, to prevent people from accidentally screwing up their own arms.
The alternative would be to allow everyone to have two skins (one for each model) but that's no less problematic as they'd now have to store twice the skin files which would bloat and slow down the skin servers. Not a great idea.
That is pretty frustrating. The skin file itself should determine whether or not you have thin arms or not. Now we're going to have a buttload of noobs running around with broken skins because they didn't realize that skins have to be made with the certain arm model in mind.

We've yet to see how the implementation will play out. Hopefully they'll go with that method for the simple fact that it makes more sense.
