So the obvious way to change an item name is an anvil. However, I'd like to know if there's a method using a resource pack in order to do this. So far, I haven't found anything, but my only experience with resource packs is changing the songs for my records.

In order to edit a language file you need to have a text edit program. Notepad can work but Notepad++ is preferrable. (it's free and much more easier to use).
Here's how to edit a language file:
1) Get the language file. The language file that is used (by default) in Minecraft is called: en_US.lang. You can find it in: User/AppData/Roaming/.minecraft/bin/minecraft.jar/lang
2) Make a copy of the en_US.lang
3) Put it somewhere in your desktop, open it with Notepad++ and edit!
4) Once you're done, save and put it on your resource pack. It should be in: NameOfResourcePack/assets/minecraft/lang
Edit: Here's a template of the Default Resource Pack. It can be useful.
