You're missing something. Or, rather you seem to have added a step in logic that you should not have.
Yes, the default model is in fact inherited from a chain of other models... but why does that matter to you? You've created your own model which is to replace the default one. Give it the correct name and put it in the /block/ folder. This will cause all of the inheritance steps to simply be replaced with your model.

If you didn't change the blockstate file, that's not the issue and you don't even need the blockstate file in your pack because the default blockstate file will be used.
Please post your anvil model file.

If you are trying to randomize the models, you have done it completely wrong. Adding a tag a second time simply overwrites the old one, you need an array for the game to randomize them

If they are updated to 1.8, then yes. The main difference is that their blockstates and models start in assets/modname/ instead of assets/minecraft/. Check the mods .jar file for its specific name.

I have in the middle an orange flower pot, but if I remove it and put it again 1000 times, 1000 times sets an orange pot, never change to blue. And the same happen with all the blocks. It seems like if each coord has an specific and default texture for each block. How can I solve it? What happen if I want a blue pot in the middle?

This is working exactly as intended. It's not supposed to be random, nor are you supposed to have control over which variant you get. That's not what 'alternate blocks' is designed for. The game has to keep track of the variant to keep things consistent, so the simplest way is to use the coords as the seed for the 'random' variant.
Think of it much the same way you think of seeds for worlds. If you put a certain seed in, and then generate a world, you'll always get the same world. Same here. If you put that block in the same position you'll always get the same variant. This is by design to keep things simple and straight-forward without bloating the save file with information that would be meaningless 99.9% of the time.

This is how random blocks work in Minecraft, it's sorta like terrain generation where there is a set 'seed' causing certain situations having a set outcome at a certain spot. You can only change it by changing the weights of the random options, even then it isn't changing a specific block's choice.

Yes, it can be totally different if you want. The .JSON files in models/item/ determine what a held item/block and an item/block in inventory will look like. By default most of them point to the model of the block, but you can replace that.
The alternative textures in default are simply the single standard texture rotated and/or mirrored. You can disable it by editing the files for the appropriate blocks in the "blockstates" folder.
Or just use a texture pack that doesn't have those alternate textures.

also the texture looks like anvil_damaged_002 in my hand....
EDIT: I deleted the anvil blockstate and replaced it with the default one, now only 1 anvil texture will show.
EDIT EDIT: i deleted the original anvil texture and place both custom textures (the anvil textures) and now the top looks like the classic anvil :\
