You can specify alternate textures for items based on stack size, enchantments, damage values, and nbt data. You can do a lot of cool stuff, if you can figure it out. One thing that seems to be popular is making a super-fancy sword texture that only appears if the player uses an anvil to rename it to "Excalibur."
You could have the stone as muffin stuff and the coal as dark chocolate chips. That gives you something for the other ores too!
Plus it would taste better as liquorice is nasty.
I got some ideas for ores if stone is muffin-stuff, Lapis Lazuli could be Blueberries(?) Quartz could be white chocolate, and Redstone could be Red Licorice

Make your fancy sword sprite, and stick it in your /cit folder (which is new). Unlike CTM, you don't put it in a subfolder in the /cit folder. Name it excalibur.png (or whatever). Also make an excalibur.properties (also doesn't matter, as long as you name it the same as your png). In the properties file:

And yeah, how images work can be a pain in the butt. You could click right after the word before it and press enter, like I did.

To do damage values:
I haven't played around with this too much, so I can't give you any good numbers to use for 'x' yet, but it has to be between 0 and 65535.
Frosting = Tall Grass
Red Gumdrop = Rose
Yellow Gumdrop = Dandelion
Marshmallow = Red Mushroom
Chocolate Square = Brown Mushroom
Graham Cracker = Bowl
S'more = Mushroom Stew
Roasted Mallow = Torch
Big Marshmallow = Coal/Charcoal
The only problem is, eating a s'more gets you your graham cracker back.
