Ok, I've started the challenge!
These are the blocks I've got so far, they maaaaaay be pushing the whole 'simple' idea a bit but I really do like this style and IMO it is still simple, just stylised simple...
Just so you know, you might be able to guarantee that someone will use your palette if you happened to edit it and add in some nice orange tones....just a suggestion.

*spasms*
OMG, I love the planks and the little circle things on the logs and the side grass and long grass and it's not really all that simple but x3x
EDIT: What palette are you using?
Yours.
I'm changing the dirt again, it still looks derp. I need to change its style completely methinks...
@Peyton, yea, it still isn't REALLY simple but I'll keep simplifying it. At least it's more simple than the last pictures I posted! (wouldn't be hard though)
Looks like I'm restarting, Ill save that current work I did for later. None of the palettes, although gorgeous, they wouldn't work with my pack, so, i shall go simpler.. I guess..
I should probably do a banner of some sort tomorrow for my pack as well. So much to do, so little time.
I'd say that is almost pixel art, just barely simple enough.
What can I say, I live on the edge...
To be fair though, 99% of simple packs are pixel art given the use of palettes and whatnot. There aren't really 'rules' saying you can't have dithering or anything either... (in my case the dithering is just some spots for my top grass anyway, not really dithering)
Ok everyone, massive post here. I made some more progress, you guys are welcome to check it out too because I'm including a link for the pack in its current state. This is because it only includes the terrain and some biome files that stop biome colours working so I figure it might be useful for you (or you might just want to test the pack) Anywho, here is the pack link: http://db.tt/QZhVrlgt
Maybe I should withdraw from the comp and just continue the pack in my own time? I really like how it is atm but I dunno, I guess it isn't exactly simple, more cartoony...
Would the textures in their current state be disqualified? (try them in-game though, they look more simple there)
This is the one I've chosen. Off to get started.

EDIT: I done more...
Anyway, I've started using steel's pallette. It's looking good but my computer is currently in use. Not pics yet.
More progress, TNT, leaves, and ores:
Also, is ANYONE using my palette?
(Made my own emoticon so I don't have to do :l anymore.)
I....might be. *whistles innocently*

EDIT: Looking good, Lizard and number4!
