The problem that you have with the title screen background is because that file has indexed colors which means that only a set group of colors can be used in the particular picture. This is used to cut down file size. To use different colors, you must change the picture to rgb mode (which lets you use unlimited colors in a picture.) With a program like GIMP or something.
Or you can just make a different 16x16 png in paint with the same file name and get rid of the other one. This would be your best bet for something as simple as a pure white background.

fyi as long as you make the image tileable and a 8bit rgb .png you can make it (almost) any size and should be able to make it any shape too. all it is is an image set to tile kind of like what alot of websites use (points at mcforums background)

If you're wanting to edit the images in minecraft.jar, you open it that way, up above what you said seemed to be that you were having difficulty with that. assuming you don't know how to: .jar files cannot be double-clicked open with winrar or 7zip, you have to manually choose the archiver. then opening that you have the items of the game, images, code, and such. as for the character skin, I'm not sure but it might be the hair... idk
