Can you make a mod that let's you take a screenshot of the whole structure that is so large that you can't see the entire structure or does something like this exist?
You are better off using a 3rd-party mapping tool which does not have any of the limitations set by the game; for example, I can render an entire 525 MB world (about 6600x6600 blocks) at once, which is split up into multiple smaller render passes depending on how much memory is available (trying to load such a world in-game would load about 40 times as many chunks as a render distance of 32 and require upwards of 32 GB of RAM even on an less resource-hungry version like 1.6.4):
A full-size closeup of the area around spawn:
I'm not familiar with many mapping tools (the one I used in the example isn't even available for download anymore unless you use an archived page, and doesn't work on newer versions in any case) but the Wiki has a list of tools, some of which even render using actual textures; you can also use MCEdit as a map viewer which is much like being in the actual game (note that as with MCMap many of these only work for older versions due to the changes 1.13 made to the save format):

TheMasterCaver's First World - possibly the most caved-out world in Minecraft history - includes world download.
TheMasterCaver's World - my own version of Minecraft largely based on my views of how the game should have evolved since 1.6.4.
Why do I still play in 1.6.4?
Is it possible that someone makes a mod that does exactly what Chunky does only it is easier to manage than Chunky in 1.12.2
