If you're looking for something easy, mcreator's as much as you're going to get. If you want the freedom to do whatever you want, you'd have to learn java, which isn't simple and easy like you said. Sorry

Maybe try Tynker... That is really the only program I can think of that might be able to do a mod besides MCreator.

I know you said "simple and easy", but there's IntelliJ if you're interested in learning to use and type code for Minecraft.
