Solved! (At least I think so...)
Unless it just coincidentally decided to un-break right at this moment, the ExtraDoors mod was the single one causing the world to not load. I have no idea why, and it may have just been a coincidence, but at this point I'll take that sacrifice if it means not having to worry about this for another two days.

So, I have no idea what's happening and I'm starting to get tired of troubleshooting it. There's a certain mod I really wanted, but it was only for 1.16.4 and I was back on 1.16.1. I finally decided to just try and upgrade everything - not every mod made it, but most of my essentials did. These are the mods currently installed:
They should all be on 1.16.4, some are on 1.16.3 but I've read that they still work on 1.16.4.
Creating a new save: works perfectly. Loading this redstone superflat world from 1.16.1: works perfectly. However, trying to load my survival world from 1.16.1 (the whole point of upgrading everything), it stays on 0% for a couple secs, jumps immediately to 100%, and then just sticks there. It doesn't crash or stop responding, it just sits there and doesn't move. I can't close the game during this without the task manager. My CPU usage while its stuck is at its idle 6-12% or so, clearly it's not trying hard to work through something.
Any idea what's causing this? My only guess is that it's some items or blocks from a mod that I no longer have installed seeing as the bare superflat world loaded, but I doubt it. I noticed this happening every single time I've tried to load the world in the log file:

You do have Glassential for Forge in there which could be a problem (though I think it's being ignored) and besides that there was custom dimensions in 1.16.2 or 1.16.3 (though for datapacks not sure if it could apply in some way here) there doesn't seem to be anything off with the mods you have in the folder.
Do you mind making a ZIP file [no RAR files please] (hosting wherever possible) containing those mods.the .minecraft folders that I could look at and import to see what's going on?

You are using worldedit - save important parts of your old world in 1.16.1 as schematics
Create a new 1.16.4 world and load it there
That's not really gonna be an option for me unfortunately - it's a survival world I've been working on for weeks with a fleshed-out village that I've built everything into (and the caves I've gotten are pretty good) so I'd have to save entire chunks as schematics if I wanted to keep it.
You sure there's absolutely no other way to solve it? What If I go back in 1.16.1 and destroy the offending blocks? (I mainly see hay blocks and cactus, both of which I don't need to keep anywhere)

You can try this - with Worldedit (replacenear) you can do this via commands in a specific radius

When I try to replacenear any radius past maybe 100 everything seems to break - entities freeze, can't open chests, pressing Save & Quit goes to "saving world" and then freezes, etc.
I'll try doing it in at least the chunks around spawn and see if that does anything?

Trying to create a new survival world (all default settings, even the name, I touched nothing past clicking "create new world") it does the same thing. Except now, it gets to 6% and then completely gives up loading the rest - it's not frozen or "not responding", it just sits there. I tried to let it go for 6 minutes and it just sits there, at 6%. Backup and delete the .minecraft-folder or create a new directory with your profile
Also make sure you are use the latest version of fabric and its api
I ran fabric 1.16.4 (latest version of both it and the api) in a new, blank directory with the same mods I was trying and the save I wanted to load, and I'm getting the same 100% glitch. If I remove everything from the mods folder besides optifine and the API but still play with fabric, it loads perfectly fine. So then, my only guess left is that it has to be one of the mods?

The only datapack I have installed is treecapitator, if that means anything.
EDIT: Removing glassential did not remedy it either.
This refers to a vanilla issue with updating maps from 1.16.1 to a newer version
The missing key errors also refer to vanilla items/blocks and is not related to a mod

Okay, update. Doing that and loading it in vanilla 1.16.4 works just fine - even farther away existing villages with hay don't crash anything.
However, loading it in Fabric 1.16.4 seems to still give me this 100% freezing thing. That latest log is here: https://pastebin.com/udTHMnc7

Try to reinstall your mods and fabric
Backup and delete the .minecraft-folder or create a new directory with your profile
