It seems like every time I find a mod that adds animals to the game, it has to go overboard. Either it adds TONS of mobs, or mobs that spawn EVERYWHERE, or new dimensions, worldgen, tons of new potions, random events that disrupt the gameplay, etc. Isn't there a mod that just adds a few ambient mods such a a squirrel, a bird, a fish, maybe a turtle, and that's it?
I'm not familiar with the other two, but I'm fairly sure Mo' Creatures falls under the "tons of mobs" category that the OP wanted to avoid.
Well, I don't use Mo Creatures, so I don't know much about the mod. The other 2 should still be valid, though. Good luck finding a mod, because most mods nowadays add a whole crap ton of stuff.

True, but there are some mods that allow disabling a lot of things in the configs, which might bring them down closer to what the OP is looking for.

Yeah, that's been my problem.
Project Zulu adds structures, a ton of potions, and the so-called "passive" mobs will occasionally attack you for no reason.
Lots O' Mobs adds fossils, dinosaur biomes and a separate dimension, annoying bunnies that inexplicably follow you around and get in your way, moles that disrupt your gardening, a tool with the same crafting recipe as the Chisel in the Chisel mod, etc.
Oceancraft adds quicksand. I HATE quicksand and won't even play Biomes O Plenty because of it. Last I checked it couldn't be turned off, either (although that was awhile ago).
Animals Plus is nice, but has no config file; at least for the 1.7.10 version (I would want to turn off the Butterflies due to already having them in the Forestry mod).
I really like the unique creatures of Lycanites Mobs (especially the passive ones like the Yale and the Silex) but it comes in at a hefty 40 mbs, which is twice as big as Mo Creatures. Not to mention it makes the Nether near-unplayable w/ hostile mobs spawning from both fire and lava, PLUS Nether-specific hostile mobs on top of that. Also hostile mobs spawn out of... well, everything. Very jump-scary and not so good for my anxiety.
I might go with Exotic Birds. It doesn't seem too intrusive and doesn't overrun the land with mobs, plus it gives you things to do like breed the birds or "collect" them via the encyclopedia.

Yeah from what I recall, last time I used Mo's Creatures (Probably in like 1.3 or something) it let you change spawn rates and stuff. I could be wrong, but its worth a shot.
A good fish mod would be Aquatic Abyss. Although it does add some aggressive mobs, the mod itself is still great while adding some regular everyday fish. And about biomes o plenty, it's pretty stupid that you don't use a great mod because of one block it adds especially when you can disable it.

Wait, how do you disable quicksand in Biomes O' Plenty? Even in the configs for the Beyond Reality modpack (which I'm not actually currently using), that often include some not-really-used configuration options, I find no indication that there's a way to do that.

I think it's pretty ignorant that you call someone stupid because they don't share your enthusiasm for one mod. Also you can't disable it. It's not in the configs, plus the author addressed the issue awhile back when someone else asked how to disable the quicksand and said that he didn't plan on adding an option in the configs.
I never called anyone stupid, don't get me wrong here. I called the reason stupid. And to disable quicksand you need to use Minetweaker.
Edit : You can also disable the biomes that spawn with quicksand. Or you can generate a world with biomes o plenty, and fully explore the dessert where quicksand spawms so you can generate all the chunks, and use MCEdit too remove the quicksand, but it'll still spawn with newly generated chunks. It's just one block man, just one block.
Ok, I didn't think it was important enough to warrant an in-depth explanation, but I guess I'd better elaborate.
I greatly prefer ExtrabiomesXL. I like the biomes better, the redwoods better, the flowers better, and the fact that the mini-jungle quicksand can be turned off in the configs. I don't like BoP for a few reasons, including a multitude of ugly biomes, useless ores, the awkward sudden changes of sky's hue when you step into another biome, and non-togglable quicksand. So it's not just one block.

Download Just Another Spawner. You can download any of those other mob mobs and use JAS to disable whatever mobs you don't want.
You could maybe try Primitive Mobs. It adds about 10 or so mobs, each of which are very vanilla-like.
