As for gameplay mods take a look at the Ancient Warfare mod, it adds medieval technology and NPC's to automate your world. You can create NPC's to mine, farm, and fight for you, they're also much easier to setup and more reliable than Custom NPC's.
Did you mean Not Enough Items by ChickenBones or are you really using Too many Items? I'm asking as theirs no reason to have Code Chicken Core if your using TMI, however I'd recommend using NEI as it's less buggy and has more compatibility. It also has some amazing add-on's such as WAILA which tells you the name of an item your looking at as well as what mod it's from. Also if you decide to keep Code Chicken Core try out the other mods by ChickenBones, there are some very useful mods.
You should try the MapleCrafted Mod since you're making a Role-play and it adds in 100+ cool weapons. It is also a work in progress which means that you can get your ideas implemented into the mod much easier and faster than most of the big mod makers who would push other ideas off.

If you are going survival, may I suggest Mekanism by aidancbrady, it is regularly updated and is one of the best tech mods (5x ore processing, dynamic tanks, one of the best mining machines in all mods. A good power mod is Big Reactors, I love the design of the multiblock structure and it can produce large amounts of RF.
Shoud try out The Betweenlands mod which has been recently rebooted with a whole new ton of content in the moment. It's a dimension mod based around a dark, desolate swamp-theme that has beautiful music and models. You should definitely try it out.
It's just the developers are trying to keep the mod a secret and hidden from most people right now as it's still not finished and fully developed. Even though it's still in Alpha, it has a chock-full of content at the moment. Expect some bugs and unfinished features, though.
Ok, so I'm about to sound like a complete noob but I have never really used a techmod beafore, as I only started out modding and then my PC broke and and now I have to wait for my new PC (I'm using a really slow one) beafore I can start again.
So can you please explain what RF, ore procesing and stuff like that means?

RF or Redstone Flux is a universal energy unit on modded minecraft (in other words electricity). Mekanism uses Joules (J) as its unit (so like IRL energy unit), but the config can be changed to RF. Most mods can accept each type but some will require you to convert it.
Here is a list of energy types and a mod that uses it:
-Charge [Factorisation] (I have not used this mod yet)
-EU (Energy Unit) [IndustrialCraft2]
-J (Joules) [Mekanism]
-MJ (Minecraft Joules) [Buildcraft]
-RF (Redstone Flux) [most mods, i.e. Thermal Expansion]
-Shaft Power [Rotarycraft] (again, not used this mod)
-AE [Applied Energistics] (Great mod for mass storage in a small space (due to it being a computer mod))
Ore processing is something that appears in many mods (even magic ones like thaumcraft). it basically means that you increase your ingot yield from ores. Mekanism has anywhere from normal to 5x ore processing. 5x takes a lot to set up and is quite expensive, however it is worth it as you will get even more back (5x means you will get 5 ingots from 1 ore unlike base minecraft where you only get one). Lastly, since you asked about those, Mekanism mining machine (digital miner) requires a lot of energy but does not leave a giant hole like Buildcraft's quarry and you can mine specific blocks. if you want a certain ore, then you type ore then the one you want (so iron ore would be oreIron (make sure the first letter of the thing you are looking for is uppercase)) if you want all ores then you type ore*
While I am at it I will suggest more good mods:
-Journeymap (brilliant mapping mod, I have it in any modpack I make)
-Botania (a beautiful techy/magic mod based around flowers, mana and fun (requires the library mod Baubles to run))
-Pam's Harvestcraft (great food mod with 90+ base ingredients (crops, fruit trees, fish, etc...) and hundreds of foods to make with said ingredients (anything from a Bacon Cheeseburger to Soymilk)
-Immersive Engineering (nice looking power mod (not as powerful as Big Reactors but much nicer looking) with waterwheels, windmills and a diesel generator, it has power lines that look awesome and would be perfect as you are building a village).
So I'm going to make a custom modpack for my server.
And I wanted to know if I missed any cool mods, or if they are any mods that don't fit or have compatibility issues
A few things before i show you the modlist.
1. I'm using 1.7.10
2. We will be building villages so mods to help with that will be great
3. The modpack is private so permissions do not matter
4. If I dont add your mod to the considering list or dont use it then sorry, some may not work, someone may not like it or it may just not fit in.
5. anyone know how to remove any extra lag that may crop up?

Great idea, but I think its more geared to survival where as I'm going to be in creative and/or role playing.

Also regarding too many items, i meant to many items as NEI does not work for one of the 2 friends who will be using the modpack along side me.
With code chicken core im not really sure about it, but i asked my friend what mods she wanted and she told me it was needed so i just put it in.

Correct, you need CCCore for NEI. I would double check to make sure your not missing any other core mods that might be required.
