1.- open minecraft.jar using winrar, to locate that, search in your start menu for %appdata%, then click "roaming", then click ".minecraft", then click "bin" and there's minecraft.jar, your right click on it and open it using winrar.
2.- cferrill1 answered that.
3.- delete or move your minecraft.jar, and run minecraft, it will re-download the minecraft.jar again, and it would be good as new (note: your saves remain intact since they have nothing to do with minecraft.jar)

2. you use the HD texture patch by xau it has a custom lava/water option
3. you delete your appdata/.minecraft/bin folder and the game will redownload it when you launch it

Ignore what DarkOmegaMK2 said.
Deleting minecraft.jar accomplishes the same exact thing you said with no ill side-effects. There's no reason to ignore him.
