There's already a key-binding for the camera. If you'd looked in the controls section you would have seen it. You also would have seen that the shift key for cutting the engines and engaging the parking brakes was the right-shift key, which doesn't unmount you.
That being said, I've released an update (2.1.0) with a few changes to the config GUI. This should keep the questions about key controls to a minimum, as well as adding a bit more customization.
Also, this update should patch the issues with shift-clicking and REI's minimap. Let me know if it doesn't.

Now, this is going CRAZY! But, if possible, can you be able to have a radio which you can use with a mic? Very crazy, but would be cool using fake code names and stuff. And also, current status on the update that will release teh new plane?
No, I will not be implementing radios. Just getting speech to work in Minecraft is a hassle, and should be left to mods that wish to poke around with that code. About the only thing I could do would be to simulate air traffic control, but I don't see a need for that as the mod's not popular enough to be played on large servers (correct me with a picture, if I am mistaken).
As for a status update: I haven't worked on the new plane since I posted the picture. This is due to me starting work on overhauling the Rail of War mod, which has taken up all of my modding time. I'm about 75% done with that work, though, so expect me to start back to work on this project in a month. Real-life issues notwithstanding, of course.

I don't know this is not related to this mod but its under minecraft and planes theres a vanilla plane in minecraft for 1.9 If you would take a look at it maybe you could get some ideas for planes from its design?
For some bloody reason my planes refuse to lift. Whatever i do with the config, controls, power and what not, my planes just either lift and then hurl to the ground like a brick without stalling, or just not lifting at all. I have no idea what it is...

The trick with the planes is to keep up your speed. Real planes stall if you try to pull up for too long, and MFS planes are no exception. You should keep a close eye on your speed when climbing. Anything below the green mark is just begging for a fireball.
You could always post a video here. If there's a bug, I can look into it, and if not I can at least tell you what you're doing wrong.
I managed to lift the plane and fly for some time... But it is still strange that i couldn't pick up enough speed to fly... I tried starting off of a plains biome in game, failing miserably as i didnt have enough of a run way, and most of it was a downwards slope, and a default flatland... where i really don't know what the problem was....

No new planes in this update. The only thing that has been updated is the version. Go get the new 1.8 version on Curse now, or wait a few hours for the system to sync and the download to appear in the OP.
A few notes about the 1.8 version:
Updating was hard! It took me two days to slog through the 100+ json files I needed to create for all the items, and that's with a script creating them for me. I detest all the extra hoops I have to go through just to get a 3d item to render, and am not looking forward to creating more of them.
Due to the json file format some items have changed shape. Propellers no longer render isometrically due to json not being able to render cubes at the 60 degree angles needed for the 3-bladed propellers. To compensate for this the number of blades are shown on the tooltip.
The rolling of the camera and zoom functions have been removed, due to Minecraft removing the appropriate variables from the code. Blame Mojang for removing features.

You could still hack past minecraft directly into Open GL if you wanted them to stay .
Ah! Guess I'm going to be learning some new GL things this week. If I can get this working on 1.8 I'll probably implement it back in 1.7.10, as I'm trying to make MFS use as few Minecraft classes as possible for update compatibility. That, and I'm not a fan of using reflection or access modification.
Would you happen to know the appropriate GL commands to edit the camera? I didn't see anything mentioning GL while I was researching camera zoom for 1.7.10.

Minecraft is pipeline based. So just learn basics of Open GL. Either on C or java with LWJGL (better 3), but across languages, all GL related names and syntax is the same.
I think that zoom can be done by changing zNear of frustum. Although, not tested.
EDIT: Nope, not zNear. Something else. You can probably look at how it was done in 1.7.10 .
After doing some digging I've found that the fellas at Forge were kind enough to add-in an event that fires right after setting up the camera that lets me control the roll. That not only fixes the roll issue, but also allowed me to remove some code modules to boot.
Zoom is still an issue, though. I was wrong about Mojang taking out the variable (they only took out the roll variable), so if I can find the obfusicated name for the zoom variable then I can just update the reflection code and kick the can down the road. Finding that variable name is another matter; as far as I know there's no partially deobfusicated Minecraft code.

that sounds like it would be too much work to integrate. That would be better as a separate mod all together in all honesty by how it sounds.

Ok so this was happening to me to for a while and so I have come to three conclusions:
1)Create new plane
2)The flaps need adjusting
3)Keep nose up (not to high though) and full throttle it.
