Yea, the only other reason I can think entities might go missing is if something's conflicting. If you don't have any resource packs enabled, those probably aren't the cause, so it would be worth checking other mods. World Downloader does mess with entities a bit, but only during saving (and only when you've specified in the entity options that you want a certain type of entity to be disabled). Liteloader usually avoids that, though. Hm.
I've installed the coremod but the new version doesen't show up in the menu for some reason. It doesen't crash, it just isn't there
Are you on the correct launcher profile? You might not have switched to (or created) the correct one in your launcher and are instead launching the vanilla game. To check, launch minecraft, connect to a server, and then press F3. At the top left you should see something like "Minecraft 1.8 (1.8-wdl/worlddownloader1.8c-fix2-coremod)". If you see "Minecraft 1.8 (1.8/vanilla)", you probably didn't switch to the right profile.

One suggestion though. I'm playing on a skyblock server, and when I download an empty sky world it starts generating chunks a few hundreds of blocks away. I'd really love to have an empty world override option in the settings, if that's not a problem

I can do that, although it's a little complicated. If you want to manually do it, you can use an NBT editor on level.dat and setting "generatorOptions" to ";0". This will cause the superflat generator to generate air blocks. I might put that in to 1.8d when that's released (I've already made a few other generator options tweaks).
On a side note, I'm releasing a second beta version for 1.8.8, as the update-checking code was broken in the first beta. It'll be available here.

Did you extract the .litemod file? If so, don't do that. Also, while on the title screen, can you click on the little tab at the side that should list litemods? If WDL doesn't appear in that list, then you've done something wrong with actually adding the mod, but have set up liteloader properly. If there isn't a tab, you're missing liteloader.
I don't think it would work that well for slime chunks - to get slime chunks, you need the seed, and that information can't be automatically saved (only if you have /seed permissions). You can also manually enter the seed if a server operator tells you it (although you could use the chunkbase tool to find the slime chunks in that case).

I tried it with a chunk finder on 1 player and it did work, slightly... I tried to build a slime farm where a chunk was but nothing spawned, so I'm converting that space...

Are you using the right version of the litemod? Maybe you downloaded the coremod one instead (which liteloader won't load)? You should be using the 1.8c-fix2 litemod version.
Just to let people know, I think this is a workaround to finding slime chunks, but maybe not... I dled a world and went around to find the slimes, when I found some I wrote the xyz down and proceeded in the server, built a spawn chamber but nothing spawned, but it could have been a mob limit reached
No. The list of plugins is only sent if a player can do /plugins (or a similar command, such as /version and then pressing tab), and the server never sends the actual plugin files to the client (plus, I don't see a case where that would be necessary).
But in most cases, it's pretty easy to find out what plugins a server has installed just by playing the game.
