With all of the skyblock clones / attempted clones out there it was really nice to find a map that throws a well executed twist into the mix. It has been challenging, entertaining, and excruiatingly frustrating (in a good way), trying to figure out ways to manage resources and use (abuse) the villager trading system.
I've been playing with a self-mandated hardcore rule of 1 death and I restart. I'm currently on my 6th try and just got pigs to spawn, stupid ocelots kept showing up and their just not good eating.
Funny death experiances to date:
Approx 3 hours in, sitting at half a heart of health. 3 blocks up, missed the ladder. Splat. Dead.
Also approx. 3 hours in, down in the ocean building a roof and got to far away from my breathing hole. Gurggle Gurggle, Bloop. Dead.
About 8 hours in, Yay an iron golem finally spawned, I hit him with a flower by mistake, he hits me back. One shot. Dead.
It took a while (Sorry!) but I finally got the Hardcore mode out. As a bonus, it's also a much smaller download than before. The only two differences are that it's in Hardcore mode (Of course) and that there is no emergency chest (hey, you wanted it hard).
Though, the question remains: How do I get down the that bottom gravel without perishing?
I've done it two ways now. The first was to a build a an 5 block + shaped shaft all the way down, removing the center block and adding a ladder to create an enclosed tube down to the ocean floor where I built outwards to the gravel. Then I died (and like you was playing with the 1 death restart mentallity, this was before the hardcore version was released).
Subsequent attempts I have been lazy and just made a single block column to the ocean floor and attached a ladder, which clears the water and creates the same effect as the first method, but with way less resources.

Whew. This is hard. What I've ended up doing is expanding the island with each of the types of wood in the biome-quarterly direction (i.e., oak planks = plains, birch = desert, pine = swamp, jungle = jungle (of course).
I'm doing the exact same thing, at least out 8 blocks from the center or so. It makes it far easier to remember which biome is which, and it's nice in particular to know where the Jungle is to get (or avoid) ocelots.
I hit the flatgrass in a boat too hard. Death by hardcore.

Don't forget you can use bone meal on mushrooms! I've found that if you can survive long enough to generate a renewable (on demand) food supply you've passed the first major hurdle. I've died twice now when a bad start doesn't give me enough apples or oak sapplings paired with long growth times.
That's my only complaint with the map (so far). That at least for hardcore you are really luck dependant in the first 30 minutes for food, unless I'm missing something really obvious, which is entirely possible. Then again, they don't call it hardcore for nothing!
Also, there's another source of dirt that doesn't involve hitting the ocean boundary... Let me know if you want a hint.
Ah, sorry, I must have misunderstood. I was thinking that you tried a mushroom farm by trying to get the mushrooms to naturally spread across the mycelium and that wasn't working for you.

Rules, Notes, and Challenges

Rules:
Do NOT purposely drown or otherwise kill yourself to regenerate your health. Food can be sparse to begin with, but between apples and rotten meat (hey, it's an emergency!) you should be fine. With luck, a villager will tade you some melon slices. And you can always use bonemeal on the grass to get wheat seeds.
Do NOT visit the Mainland until you have completed all challenges. This is a flatland biome so there's not much there anyway, but even the dirt should be restricted to what you can get in the ocean. And it's FAR too easy to get animals there.
Do NOT visit the Mainland in the Nether either, until you've completed all challenges.
NO Mods, Hacks, Flying, etc. No going to LAN mode to turn cheats on. If a mod doesn't help (optifine and the like) that's fine. But nothing that will make this easier.
Play on at least easy difficulty. You need those mob drops anyway.

Notes:
I put extra leaves on the trees to start, to increase the odds of getting saplings. However, it is still possible to be unlucky and not get a sapling from one of the trees. Especially the Jungle tree. Either do without, raid the emergency chest, or restart if this happens. I personally recommend getting the trees cut down first and breaking all of the leaf blocks to see what you get, so you don't waste time building anything before you know if you need to restart.
The "island" is on the corner of 4 chunks. All 4 of those chunks will spawn slimes. You're welcome
Mobs (including slimes) won't spawn on bedrock. In case that comes up.
If you build your Nether portal so you could watch the sunrise or sunset through it, it'll match up nicely with the portal in the Nether. If you don't, they'll be at 90 degree angles to each other and nobody wants that.
There is an emergency chest on the normal map. It's not exactly hidden but it's out of the way. It has a few critical resources that you start with, but could lose. For the ultimate challenge, try to do everything below without ever opening that chest. NOTE: THERE IS NO EMERGENCY CHEST IN HARDCORE.
Most of the resources you'll ever get are on he 6x6x2 block you spawn on, but there are some goodies available elsewhere on the map and in the Nether.
This point of this map is doing the most you can with renewable resources, but certain non-renewable resources are available in bulk if you're willing to do the work. In particular, there is a near-endless supply of dirt and sand... somewhere.
There are 5 biomes in the world. The Jungle tree is in a jungle biome. The dark water shows you were the swamp is. It won't rain in the desert. The 4th quadrant of the map is a plains biome. Finally, the very 4 center blocks are the only place it'll snow.
Challenges:
Make an Oak tree farm.
Make a Maple tree farm.
Make a Pine tree farm.
Make a Jungle tree farm.
Make a village for the villagers. Can be a simple breeding room.
Expand the village enough to get iron golems.
Survive a Zombie Siege.
Make a sugarcane farm.

Go to the Nether.

You may also get lucky and have a villager who will trade you iron (or diamond!) tools.

You should not go to the Mainland in the Nether either, until you've completed all challenges. There are just too many resources available.

This was one thing I hated about SkyBlock/Zone. After you know what to get where, it is practically impossible to die of hunger. Standing still does not cost you energy, so when starved and waiting for a crop, you just go into anabiosis like some kind of lizard, and move only your eyes
Pro-tip: to switch to another program without Minecraft pausing, open inventory first!

Thanks for the tip! After the second death I gave in and checked out the hunger mechanic on the wiki to see what I could do to try and slow down the food consumption. Who would have thought that walking and jumping around a planted sapling while screaming at it to "grow" consumed more food then standing still and having a staring contest with my villagers.
Side note to running Minecraft in the background / while away from the computer. Make absolutely sure that nothing bad will spawn while you are preoccupied. No attention + zombie invasion + no fences = dead villager population.

Forget zombie invasions or creepers. The leading cause of death amongst minecraft villagers are inanimate objects!
