Went with 1.5 Redstone Update. I use Hoppers a lot as well as Redstone blocks for storage (not really Quartz or Comparators).
Most other updates while cool I don't use the content enough or think much of these days (phantoms and drowned hate but love the swimming and sometimes the treasure, never cared for 1.16 really, but it's a fine update, 1.4.2 is fine as well as 1.4.6 with fireworks/enchanted books, 1.7 is my most hated update still (which is why I'm not really into 1.17 either even with what I've tried of the snapshots with world gen), and the rest are fine from the Alpha/Beta and 1.0 era).
Personally started with 1.4.5 for Java Edition so felt choosing 1.4.2/1.4.6 wasn't a good idea.
Mods do play a part in my favourite versions too so while I do have 1.4.5 to 1.17 and even 1.2.5 experiences with mods I just didn't like the biome changes in 1.7 and also didn't want to upgrade due to what mods were out either. Though by 1.8 I had a different direction I went for mods.
Alphas/Betas I've tried but never really got into. The Nether/Halloween and Beta 1.8 I can understand the big deal they were and the positives/negatives but they are much more before I started the game so they just feel natural to me rather than anything I can say as a favourite version. I use the Nether, Hunger (though not a fan of and sometimes use Hunger removal mods), Sprinting and Mineshafts whenever I can, there just a core part of the game these days I find.
Interesting Take, personally I think the beta 1.8 update is the best, sure it had many flaws like "infinite" oceans and buggy animals/mobs, but It was so revolutionary to minecraft it added Creative Mode, the hunger system, enderman, Experience, Mineshafts, ravines, strongholds, villages. It also added alot of things that relate to combat (Block hitting, Critical Hits, nerfing the bow (giving it the pull-back animation) and sprinting!
Even with the upcoming 1.17/1.18(?) update I still consider Beta 1.8 to be better as it actually added more underground content (meaning actual underground structures, not just decoration or new block types); while I haven't actually played on 1.17 (or actually anything since 1.13) I've seen some videos and most near-surface caves still seem to be very limited dead ends, in contrast to the situation prior to 1.7 (which is my most-hated update and a reason why I've never really played on a later version), where you could find virtually infinite underground networks, in large part because of the addition of mineshafts and ravines in Beta 1.8, in addition to a bugfix to caves, which would previously cut off along chunk borders (some people disagree, complaining that being unable to fully explore a cave system ruins the experience):
These are underground interconnectivity maps of the same 2048x2048 block area (the colors represent a distance from a randomly chosen point near the center; the more uniformly the colors change the more interconnected things are), which shows how significant the addition of ravines and especially mineshafts was; before then the underground was mostly separate cave networks, now you can literally explore entire continents entirely by exploring interconnected caves underground (the area near the origin has less mineshafts so it is more patchy; oceans likewise reduce amount of solid ground with ravines in particular reduced due to not generating sections that would intersect water, including below the seafloor):

My reasons why it is the best update are:
1. It added sprinting to the game, which allowed players to travel their worlds a whole lot quicker than before. The method to activate sprinting when it was added was definitely a bit janky, which that method was double-tapping the W key on the keyboard, but it wasn't that bad.
2. Creative Mode was introduced to the game, which allowed players to create things without needing to gather resources or anything else related to Survival Mode. Prior to Beta 1.8, you would have to install a couple of mods (those mods being SinglePlayerCommands, and TooManyItems) to get a pseudo-creative mode, and even then it was just kinda meh. While the Beta 1.8 creative inventory definitely was something that should, and eventually did get worked on, it was there, and that's what matters.
3. More naturally-generated structures were added to the game. Before Beta 1.8, there were dungeons, and that's about it. But then in Beta 1.8, more structures were added like mineshafts, which were these networks of 3x3 tunnels that generated underground which could offer various loot such as diamonds. Villages were also added, which had no villagers at the time, and were utterly useless. I'm sure there are more things that were added, but I can't think of any at the moment other than ravines.
4. The terrain generator was completely overhauled and was an improvement from Beta 1.7. New biomes were added like Extreme Hills which were very interesting to explore. I also think that swamps were generally more appealing in this version as the grass color was more lush and bright. I also want to talk about the Beta 1.7 terrain generation as well. Beta 1.7 was more crazy, there were no real forms of mountains, the noise map would just cause these sudden changes in height and cause this magnificent landscape to occur. Personally, I think that terrain generator is really cool, but I feel like people's reception on the Beta 1.8 terrain generator as far as I've seen myself (so it may not be entirely true) just seems to be very negative, mostly focusing on how uninteresting the terrain became and how flat it was, but was it that flat as you make it seem? I mean, sure, swamps and forests were flat, but extreme hills biomes were still absolutely stunning to look at, and not to mention, they were pretty large biomes as well, with little flat spaces in between, somewhat similar to Beta 1.7 terrain. I personally feel like release 1.7 just worsened the surface terrain, with mountains now becoming all the same, and also adding biomes that no one wanted (*cough cough* savannah *cough cough*), but before you say anything, the post-1.7 features definitely outweigh the awful terrain. Anyways, I feel like I'm ranting now, and I also ran out of things to talk about, so that's the end of this post.
I definitely find some of the flaws a bit annoying, such as infinite oceans, but I haven't found it too much of an issue yet. You can always correct me on my statements, but this post is enormous, so I have to quickly end it before it seems like I'm trying to write a 10,000 word essay over the best update of a block game.

I have to agree with you, I personally like both combat systems, they have their own ups and down (pre-1.9 had spam clicking, but you could only block with your sword, and we already know about 1.9 and after). My only problem with 1.9 combat is the cooldowns feels a little too long, and I'm not sure if this is already in the game, but I feel like if your cooldown is almost over, but not exactly there, it should deal like 80-90% of the damage.

I agree, it's nobody else's fault if our reactions are too slow and simply nerfing people's ability to do combos is a cheap and lazy way to add challenge to a game.
Other players have access to high grade weapons just like we do, if they first start in a world then they need to earn their own gear,
not have the game hold their hand just because others got there first.

1.17 is probably going to end up being my favourite but we'll wait and see.
It's too early to judge in my opinion.
I will say the aquatic update is my definite favourite for the time being,
but I have a strong feeling this is about to be trumped by Caves and Cliffs because
of all the amazing things it will offer.
We are getting new mobs, better terrain generation, candles, spyglass, deepslate, copper, moss carpets, lightning rods which are also made of copper.
It is reasonable to expect almost everything existing in the snapshot to exist in the final version of 1.17.
Hopefully the 512 Y build height won't require datapacks but actually become a world option or something we can edit in server properties file.
