I think you are reading far too much into one character in a Twitter post.
Donkeys and Horses are as technically different as they are technically the same, so they could EASILY have been what he meant. He also could have meant a mob that we haven't seen yet, as you said.
The important part is he never said "1.6 will be the Mob Update"

Is it just me or can villagers run really fast? I apologize if this is already a known feature but when i set the time to night, the villagers were really speedy when they ran to their houses.

The villager sounds are really funny and give them a lot of personality, but I think some more sounds would be better than just randomly using the same three. For example when hurt they should make an arg! noise and when they trade maybe something happy, they could also have sounds of awe when looking at iron golems, also when running from zombies a scared cry for help.

Donkeys and mules being just 2 slightly different variations from the horse, which itself comes in 35 "flavors", personally I don't really see those 2 as really a new, separate mob from the horses. And for the 35 horse flavors, now that is definitely a single mob for sure, in the same way that when they added grey, light gray and black sheep in version pre-release 1.2, they added variety to the sheep mob, not "3 new mobs".
So all of that is all well and good, but it also all boils down to *_one_* mob. Maybe "one and a half", if you insist on counting the donkeys/mules as a mob type that is a bit separate from "true" horses. One and a half *_is_* plural, so yeah this *_is_* strictly the bare minimum that is sufficient to say "mobs" instead of "mob".
Still, that kind of tweet kinda created misplaced hope, right?
If Jeb had used the singular mob instead of the plural mobs in his tweet, then everybody would have been quite pleasantly surprised by the sheer and spectacular variety of the new mob. Instead, he created the expectations of seeing, say, 3 totally new and different mobs. It's like if I say that I'm gonna give you some cookies, you have a hard time thinking that you'll get only one and a half, or even a single pair. What most people will have a tendency to more easily imagine is that they'll actually get several cookies. 3, at the very least. And it is exactly that kind of expectation that kind of reduced a bit the impact of the excellence of the new mob.

Misplaced hope indeed. I'd been caught by that one as well, thinking "FINALLY some new mobs! So many parts of the game barely have any! Particularly hostiles!" And instead..... horses. Not even unique horses either, but ones taken from a mod. *sigh* And then a couple of what I've been calling "horse palette-swaps".
Granted, I'm sure plenty of players like the horses, so whatever. I personally will continue just killing the stupid things off though, same as I tended to do with that mod. Never liked them much (to be fair, I dont like horses IRL either). Not to mention the whole "already have rideable pigs" bit.
Still, been a very uninteresting update so far. Dont get me wrong, I'm always appreciative for updates as a whole from Mojang, but this particular one.... normally I'm very positive about updates, but this one has even me not checking the patch notes until like 2 weeks after because I've lost interest. Here's hoping 1.7 will be better.
