Is it true that any undiscovered areas of the map will be able to spawn new structures like witch huts? I also assume that any plains areas that have already been discovered can spawn horses?
I don't think so. For example, a tutorial world you created before an update doesn't change after the update. Also, village don't spawn in tu1 worlds. But I think horses can spawn since they are not structures. I am not 100% certain, but I think I'm right.
Spawning rules are different on the console editions, mobs don't just spawn during world generation. They spawn randomly much like hostile mobs do. So horses will be possible for already created worlds.
Horses will spawn on grass in any plains biome (Even the ones resulting from a biome switch). You also might be able to get witches too. See, the witch hut is a small technical biome that witches can spawn in. So, if you have a swamp, then there's a chance that part of the biome will shift to a witch biome. You can see if one exists in your world by opening a copy of your seed in creative, and looking for a swamp. If your world has a swamp, then fly around and try to find a witch hut. If you find one, write down the coordinates, and go to that spot in your survival world. A witch may spawn there (If the correct darkness, space and block conditions are met)
But of course, this is the xbox one version, so if you've created a new world, you can just go exploring.
