I've been playing Minecraft for a while, but it was only last month that I bothered setting up an XBL account (and what a pain in my back side that was , just for a free account!) when I realized my game was out of date (I was in creative mode and didn't have things I saw in Youtube videos a year old). I couldn't tell you what updates were for Minecraft, and what updates were for the 360 itself, but I got it done.
So, what happens now? Whenever they do release an update, will I just get a notice the next time I try to play Minecraft?
I'm sorry if this seems like a stupid question, but I'm a techno-dummy :D.
Yes. If you're connected to Xbox Live when you start Minecraft, and a new Update is available, it will prompt you to download it before you can play. It's a very simple process. Enjoy!

Throw plenty of other games in too - Assuming you play them of course, you might be missing out on updates for things like Skyrim or Terraria, both of which have been extensively patched (i.e. fixed bugs with online updates). The latter had had a total overhaul, and has almost double the content of the original version.
It's great to be connected to Live - you get balancing patches for games like Street Fighter IV, free update content for Minecraft..
I would advise putting every disc you own into your Xbox and starting the game. If there's a patch or update, you'll be notified with a white pop up box, you install it from there, and your game will automatically use it. If the game gets as far as the title screen without a pop up, there's no update.
Once a game has downloaded an update, it will start loading again and all the splash screens will come back on. At this point you can eject it and try your next disc.
And of course you've got the whole Arcade (download only) market to look through. There are some GREAT games you can't get on disc which are only available on Arcade - Child of Light, Trials Evolution, remakes of classics...
If you upgrade to Gold, you get two free games every month, and access to the Gold sale, with loads of games, DLC and films at up to 75% off. Your subscription gives you so much more than just multiplayer Minecraft
