I've read the forums and I have read the threads but I have not found the answer. So before I get trolled and someone says read the forums... I have.
I've been having several issues with my sheep recently with this new update.
My sheep were jumping over the wall that was only one fence high. So I put two fences on top of each other and they were still escaping so I put a roof on it. That didnt work so I made the wall two fences wide. That didn't work so then I put a block wall down.
This still isn't working then I saw the red sheep just go poof. I was like WTF!!!!!
What is causing this?
My farm is only 10 x 10. I know in the xbox version if a sheep can move 20 blocks in any direction they will despawn but that isn't even the case here.
Does anyone have any sugestions?
I don't have any suggestions but I have an issue with penned animals appearing outside the pen, usually within 3-4 blocks of the pens, and then transporting back into the pen when I either walk by the animal or I enter their pen. It's been just sheep and cows, but not the chickens (I don't have any pigs at the moment). But it was happening before TU15. I think part of the problem is in Xbox, the game gets very confused when several penned animals move to one area of their pen at the same time and sometimes an animal spawns outside the pen. That's my theory and keeping the pens limited to 2-3 animals seems to reduce the occurences of this (it also cuts down on animals floating one block above the others in the pens which I find irksome). Not sure what to say about a sheep completely disappearing though. I haven't had that happen yet.

I haven't had any issues with them escaping like you, but I've had the issues ORabbit has had, even with sheep and pigs.
But what I find interesting about your post is the fact you had a red sheep go missing. I dyed some sheep red, yellow, and orange. The red one disappeared like yours......could there be a connection?? I dunno, seems like the color wouldn't have anything to do with it. I may dye another one red and see what happens. None of my others seems to have gone missing.
I build a water-barrier around my pens and I have absolutely no problems at all. No despawning issues, no suffocation issues, no mobs escaping the pen...
In case you're wondering, a water-barrier consists of water source blocks all flowing towards the enclosure. The idea is to have the water push the mobs back.

Cool idea How wide is your barrier? Don't you have problems with other mobs going into your pen?
I tend to keep my animals in separate pens, however after last updates I often find extra mobs spawned in "wrong" pens.
Thank you all for the helpful posts. I'm still having problems. But if I find a solution I'll be sure to post it. Maybe its a bug with the xbox version since I've never had this problem with the pc version.
Are you sure they are escaping? That sounds like a dumb question but animals can appear to glitch out of a blocked off areas. They will stand there outside of a fence forever and even look like they're walking away but they really are in the pen. As soon as you go where the animal would be and move it around or shear it the animal will glitch back into the pen. Happens to me all the time.

The way spawning/despawning works on the xbox is quite a bit different than the pc edition. On the PC they do not despawn at all, and are permanent until killed. So the only way to get any animals is to seek them out, as they only spawn when the chunks are first loaded initial; basically new terrain or area you go to.
Now on the xbox edition they do despawn and respawn. This was made so a while back and changed a bit over time. The xbox rules do apply, but due to some glitches and probably a few limitations things like what you are describing happen. Hopefully in later editions certain things could be fixed or optimized differently so less of things like this happen, one could only hope on that.
So the only things that can be done are what you have tried plus what others have suggested. I really like the water idea; that is a bit new, as the friendly mobs refuse to cross water for some off reason. Well unless pushed in, then they get confused if it is still water. So that water trap for fence might actually work, as it pushes em back; like the person that mentions that, it is quite effective.:D

I'm just wondering if this is the same issue or if there are 2 different problems (mobs despawning *and* mobs pushing each other out of "confinement").

The entire pen is 21x21.
Other mobs do get in but I just let them despawn. I try to keep the passive mobs at or near cap-limit.
