It's quite common, but it sounds like you're under the misconception that Win10 should be just like the java version, or it should be the java version's "replacement".
As you found out, it's not. In fact, neither edition is like the other. They're "different". Other than the name and basic MC features, you can't compare the two. It's not the "equivalent" to any java version (or any of the others), and never will be.
In some ways, it's behind the other editions. In other ways, it's way far ahead (and the others may never "catch up" to Win10). Every edition of MC has it's own unique, individual features (and pluses and minuses too).
No, Win10 doesn't allow "mods" as you're thinking of them. Instead, it uses a newer way to customize the program... add-ons.
A little bit of research and you would find that all of these errors are in fact bugs that are currently being worked on and should hopefully be fixed come 1.1 (which should come out this month). As far as release comparisons go, MCPE / Win10 are scheduled to get the Woodland Mansion stuff, the new terracotta stuff, and the new color palettes with the 1.1 update. That should put it right with Java 1.12 although there will still be some stuff missing.

and issues with animals spawning inside my fenced farming areas dispite making a hole in the ground and putting a bunch of chickens
Now I have a problem getting my farmer to farm,
Yes he is brown robe, I've tried a farmer and a shepard, they both harvest about 20 blocks of wheat and then stop
they don't plant new crops, they leave the seeds and take the wheat
I created the last farmer from a fresh breeding, then segregated him from the adults
once he grew to adult I dropped several seeds at his feet, he was penned in so couldn't move, he refused to pick up the seeds
couldn't figure out any other way to fill his inventory, finally I just let him go into the farm and he harvested about 20 blocks and then stopped
Playing on the PC, windows 10 edition no mods all classic survival mode, no cheats
Does anyone know what version 1.0.8 is equivalent to on a regular server, 1.11? 1.10? etc

Equivalent, no. MC W10 Edition is in any way the same, or compatible with The Java Version. W10Edition is the equivalent of pocket edition in PCs running the Windows 10 OS.

I play this version for the compatibility, speed, and portability, and the Xbox versions for comfort (sitting on the sofa)
The Java version is too old, too slow, and Mining and Crafting seems to be the last thing anyone who plays it does anymore.
I like Mining and crafting when playing Minecraft so the Java is the last version I'll play
Mods can be a cool thing, but when mods make minecraft dont look like minecraft then its a "NOPE" option of course. I mean, if i want pokemons, why not play pokemon properly. Sun and Moon is out there for a reason. As far as I am concerned I just use texture packs with Coordinates, as the only means of modification, other than that is most vanilla.

Actually PE/W10 is getting even closer to JAVA , It can even surpass it, as was planned some time back. The sales of mobile editions is way larger. JAVA suffers greatly from too MODDED gameplay, the only advantage is the content and server population.PE/W10 is catching up fast and the realms may set foot in the multiplayer area as a better option, since you dont need a players PC to keep running the server. With some more tools it might become the dominant means to play online.
