I'd love it if somebody could create Hylian language, from the Legend of Zelda. There are many hylian alphabet images on the internet.
I believe there is someone out there that created a couple of Hylian Languages. I know there is Hylian and Gerudo (2 dialects). Just try searching for Gerudo Language. That's how I found it.

Indo-European is a HUGE language family. I know there are efforts to reconstruct Proto-Indo-European, but the findings are trivial at best. I don't see that making its way to the minecraft community.
Quenya. Preferably written in the Tengwar alphabet.

Sorry to burst your bubble, but we already have Quenya, just not in the Tengwar alphabet. Hmmm..... Mandalorian? I VOTE MANDALORIAN! OYA MANDA! I guess we could have iron armour be Beskar'gam, not sure about the rest though...

Personally I just want English, but with enchantment roman numerals up to like 100 or something. As a custom map maker I find it really annoying when I try to make an almost invincible suit of armour, and it shows up in inventory as "Protection enchantment.level.20" or something.
