Any ideas on what platform most minecraft hosting sites use to host their minecraft servers? In your opinion, would they normally use a Windows Server 2008/2012 or some kind of linux based server platform?
The reason I ask is that I am currently in college pursuing a computer networking degree have used both Windows 2012 R2 servers and setup some basic linux servers for both Ubuntu and openSUSE. I will be in the process of obtaining some server racks and fancy Cisco switches and router. My goal is to provide local server hosting for my community. I was wondering if I should go to a less resource intensive linux server setup or a much easier Windows server setup. Windows Server Core is a definite possibility as I do have some powershell skills. Linux would be a challenge for me as it is not as friendly as windows.I am pretty excited for Windows Server 2016 and may wait to get that as I don't feel like paying for upgrades on licences
I have played with CentOS a tad bit at my current work place. We use it as a remote client for various things since it is on a separate network. Ill look into it.
Most companies that I know of use some flavor of Linux. Linux is extremely stable, and uses less resources than Windows. Making it the perfect choice for this application. The most popular flavors among Minecraft hosts are CentOS and Ubuntu. We use Ubuntu really only because I like Debian better than RedHat. It's all preference in most cases. Hope this helps!
You say "go to a less resource intensive linux server setup or a much easier Windows server setup" and I would argue that linux is actually easier to go with. Though, that all depends on what experience you have. Both operating system flavors get the job done in a similar fashion, it's just the workflow that is different.
Most companies out there go with a linux variant. This is easier in the way that most linux distributions come free, don't have the hassle of licenses and fees, and are simply more sensible to use on deployments of large numbers of servers. Many people would argue that linux is also more stable. I can personally attest to this, I've had windows boxes break down for no real apparent reason (Turned out to be something broke because of windows update), while my linux boxes have always worked (unless I did something myself to break them). Most web hosts out there use linux, I'm not aware of any minecraft hosts who are running windows. I think in the server world, unless you need something microsoft-exclusive (Microsoft Exchange server, or some feature of IIS), then go with linux.

Of course, Linux. Not sure why you would use Windows, it's completely unnecessary for a Minecraft server.
I use CentOS and recommed it. Also tried and had good luck with Ubuntu, too.
