After reading Grumm's tweets, I suspect this is the real reason he nerfed the iron golem farms. I've been a software developer and professional electrical engineer for the past ten years and Grumm strikes me as one of "those" programmers: a mildly ego maniacal d-bag that thinks his ability to do technical work elevates him above 'normal' people. This type can't stand the feeling they are not the smartest, most capable people around. For this type of individual, having someone exercise the ability and initiative to look behind the curtain and reveal that they are not, in fact, the All Powerful Oz, is intolerable. Tango's village optimizing iron farm wouldn't be perceived so much as a bug exploit as a personal affront to Grumm's over-inflated sense of self worth.
Um... what?

Except if the highways were sandbox to begin with then speed limits would be asinine - just as it is to intentionally "fix" something because people are making use of the "bug."
Well as SVGK said, they are already sandbox, in that you get to drive to wherever you like. You do have to stay on the right side of the road, and you have to drive at a safe speed, and stay inside your lane, but nobody's telling you where or where not to go (besides the obvious "detour," "do not enter," etc. which are required to keep everything running smoothly.) Without any rules at all, it'd be Mad Max out there. I know that "sandbox" is supposed to mean "you can do whatever you want," but it still has to be "...within the confines of the game." There's a difference between "sandbox" and "total anarchy." You have to draw the line somewhere. There still have to be some rules.
I'm not familiar with this "Garry's Mod" that he mentioned, but if you really want to do "whatever" you want, like fight with guns, fly in realistic-looking airplanes, or breed several different species of dinosaurs, then saying "but it's a sandbox game" doesn't mean we should necessarily put those things in Minecraft. At that point, just write your own game, and then you really can put "whatever you want" in it. You know, within the confines of your programming language. You still can't write a game that'll cure cancer or end world hunger or book you for a beach-front resort next week on Seti Alpha V, no matter how "sandbox" it is.
gold farms, iron farms, and endless diamond armor/tools from perfect villager farms completely erase the "survival" aspect from survival single player... at that point ud mind as well just create a creative world because u no longer have ANY need to go caving and u are pretty much in god mode. ud never die unless u do something very, VERY stupid. the only thing missing would be flying.
Even without farms it's easy enough to pull diamonds out of the ground via strip mining or just regular caving, enchant it and /godmode. On my old server I never died, I had full Protection IV diamond armour and that was that. I killed Withers and the Ender Dragon solo just because I could, not with any farms or "cheats".
On my new server I still only wear iron armour from iron I pulled out of the ground, my first farm; a single village farm, has only produced half a stack of iron thus far.
The game has a progressive curve, one that starts you off at basic cave man (many quite literally living in a cave for the first few nights) and lets you advance towards "civilized" where you can have everything you want at your finger tips and it turns less into survival and more into "what crazy stuff can I build".
Are we to remove all those things that make the game easier simply to please those that feel they want a challenge from a zombie horde or when multiple creepers attack? Perhaps it is those people who need to realize that a sandbox game is a game for us to make our own challenges. Our own mazes and traps and monster spawner fuelled gladiator arenas. That it is not game breaking to have unlimited iron, it's game changing - it means you can build bigger and crazier things to make things even harder. With the new dispenser ready way to make Golems you could easily use unlimited iron to have a "golem on command" function to use in an arena based RPG where you can click a button and here comes a golem ally to fight off hordes of monsters.
Of course we could just do it with command blocks too.. and that's not cheating right?
So why is it that the game allows you to give you or any other player anything you want, spawn anything you want, via command blocks..and that's okay - but suddenly it's cheating to do it without command blocks?
It's up to the server admin and mods to allow command blocks and then program them, should we not leave it up to the admins and mods discretion as to weather iron farms of unlimited produce are allowed?
And in the end it boils down to:
Don't yuck my yum. Play the game how you like, I'll play it how I like. If I want to play FTB or with mods or vanilla UHC with command blocks making it permanent night time. I CAN. If you want to play it differently - gasp shock awe, guess what? YOU CAN.
If Jeb really hates farms, why dont he and the team make spawners break after so many spawns, not let villagers spawn golems, and make the end turn into the sky islands after beating the dragon?
There, problem solved, all massive nonlegit farming gone. =D...
guys don't rage about iron farms. minecraft is a game of fighting building and mining. not building iron farms and camping in your house. get a cave, go mining and maybe get iron. sadly im so bad at mining that I barely ever get iron. but dudes, don't rage. it just gets on my nerves. stop. just stop.

I do agree that this bug was major but farming in general should not be removed.

You think magic isn't real? Consider this: for every person, there is a sentence -- a series of words -- which has the power to destroy them.
