Been playing the latest snapshot and I'm not sure if its in current release. But deep oceans rock.
Water straight down to 28-20 means easy diamonds. Almost no work lighting up the chunks for a mob tower, since its almost all water and few caves. Its pretty much cut out every part of the map you don't need to mine or would be a chore to light up.
Been playing a deep ocean in a new world for 2 days. Already 64+ blocks of iron, 20+ diamonds, much of the chunk is lit up.
Mushroom Islands - Pretty much almost nothing special about these biomes now. Mycelium now shares the same properties with the new block "Podzol" found in Mega Taigas, and naturally spawning giant mushrooms can now also be found in Roofed Forests. This only leaves two unique features in the biome now (Mooshrooms, and the fact that monsters can only spawn in the biome via player-forced spawns or a monster spawner), and one semi-unique feature (Mycelium, now only unique in it's appearance).
Flower Forest - Pretty much the same reasons as the OP stated. Unique-shaped trees, cherry trees, and maybe grass with a blue-tone might improve this biome in my eyes.
Birch Forest - Birch Trees are just fugly in my opinion.
Mycelium is the only block where you can plant mushrooms and grow them into giant mushrooms at any light level. It's good for farming mushrooms.

What the ice spikes needs is MOUNTAINS. Ever seen the savannah M biome variant? Well take that and add snow and ice spikes, it would look a lot better than the plains.

Extreme hills is starting to be least liked by me. Say you start in forest or plains. Well due to the new hot/cold, all I'm running into is that biome. Its extreme hills or extreme hills+ and stone beach that looks just like extreme hills. In one direction I went 5000 blocks, it was plains > Extreme hills+ > Extreme hills > forest > ocean > Stone beach > extreme hills > ocean. Other directions I run into extreme hills too. I can't find a desert, jungle, swamp, or hot biome anywhere. I am using bigger biomes, but still. Another direction was plains > forest > plains > Extreme hills.
I've had a handful of worlds now and I'm always running into extreme hills.
Forests aren't that bad, just path above them if you want or run around the ground. But extreme hills means you have to mine through mountains or mountain climb.
I don't see much point in stone beaches. Its like a small extreme hills without trees.
Turning off structures is understandable for creative mode.
Large biomes... who uses those?
The idea of the bonus chest wrecks the point of the first night.
And now they've added amplified biomes. What a waste of time, they could be adding other content.
I think there should be Superflat and Default options.

They have an overlay for the grass colour there which is hardcoded and makes the place so dang ugly. Also the trees kinda suck too. Wasn't it supposed to be dangerous as well? The only danger I can see is eyebleed from the hideous grass colour.
In all honesty, I love the colors of the roofed forest.
It's not the fact that people dislike them so much as the fact that they don't have a single, continuous canopy, as is suggested by the name (and Jeb's intention for adding them). They aren't tough or dark enough.
Ice pillars are a nice touch. Again, I don't see why they are hated. Not everything in minecraft needs a reason, why cant some things just "be"? (Also, good for structure making.)
People hate them because they lack the education required to know that those things actually exist. Mt. Elbrus on Ross Island in Antarctica has a ton of them. They're volcanic ice towers, and they're very real.
