These two are tied together, but let's look at the overall. If your hunger meter is full, you regenerate health at a fast rate. Food is no longer instantly consumed, but you can eat and run. Can mobs overcome your health regeneration rate? Only if you're standing around AFK.

New spiders are hardcore, but only because they're usually surrounded by so many webs that you can't move. Of course, a lava bucket turns both the spiders and webs into mush. Victory.

No, since the passive mob rate was changed, and animal respawning was removed. So instead of just putting light on the ground and getting hundreds of animals, you have to spend a lot of time getting the required items to farm to get food to keep your hunger bar up.

No, animal respawning hasn't been removed, but the circumstances needed for a mob to spawn after chunk generation is so impossibly and unlikely, that it will never be reproduced in a normal survival gameplay. I'm glad you could plug your thread and everything, but it still doesn't change the fact that dealing with food is infinitely easier now that it stacks. Let's pretend that mobs don't respawn at all. You still have farming, which generates a ridiculous amount of food with virtually no effort.

True, but the effort of getting the needed farming tools such as iron for buckets, seeds for melons, ect, is harder than before.

It seems easier to me. Regenerating health, more animals drop food, melons, Iron ore is a LOT easier to find now, abandoned mines offer free wood, string, and rails. And with a little luck, you can find diamonds, gold, and redstone in chests without ever having to mine it.

I forgot to even mention iron ore being more common. Once you're in iron armor, you're virtually indestructible. Thanks to the changes to iron ore, getting that first set of armor got a lot easier.

I spawned on a treeless island in the middle of an ocean and had a full set of iron tools, bread, bow, and fishing rod by the first morning - a cave led into a mineshaft directly from the little island.

News Flash, There is a ton of content and a ton of food and if anything at all made Minecraft easier it is the fact that its now possible to see at night. A lava bucket would ruin all the cobwebs which can be harvested so should be cared for, the poisonous spiders are rare and not very deadly at all, enderman totally suck, and you all forgot about SILVERFISH which is the new mob that is only found in the super rare STRONGHOLDS.

I am in a grassland biome, so food is plentiful but wood is a pain to get. There were no good places to shelter near where I spawned, and I was running around for half a day before I, luckily, found a village.
Sprinting is incredibly useful with the new biomes.

Personally I thought the difficulty didn't increase nor decrease, simply because I thought new challenges were added (hunger bar, new mobs, you can't directly revive your health, eating has an om nom nom) but also things were added to decrease the difficulty (sprinting, stackable food, all peaceful mobs (I believe?) drop food). I think the game is taking a turn for the better, actually, because it'll keep the player busy and I just like the direction it's heading. You can't spam bow/arrow anymore, you have to aim and charge, which is a lot more fair in my opinion. Also, pvp is a lot more fun now and has more of a challenge/strategizing plan.
If I ate every 10 minutes in pre-1.8 like I have to in 1.8, I would never have been down any hearts. I don't know how requiring me to eat more often in order to maintain the same heart level is "easier"
I find it easier. Previously I would always get damaged falling down, now my health just regens. Getting food is much simpler especially with stacking.
Sure there is a current problem with persistent animals not spawning but my new world had a nearby village from spawn with 5 wheat farms in it. I didn't need to build shelter I found it.
I think it's not easier--but for me, it made it more fun, which I guess made me work a little harder to get what I wanted! I do find a lot of iron, but diamond blocks are SO much harder to find than before for me. Since 1.8 came out our server has found 6 diamond blocks! That's it!
I think it seems to be easier for people who put in the initiative, but harder for those who play half heartedly? Yes you can farm for food, but those who don't like that work will starve. Yes there are chicken farms but building one can take time and resources, all the while you are starving. I think it seems like we are being given more stuff to do and more stuff to get from what we do. Honestly every 'reward' seems to come with the price of time and resources. Mushrooms not so much, but they still balance out with their inability to stack properly! We can get a ton of eggs, but you have to put in the work of collecting chickens/eggs first, plus material to make fences, signs, blocks, pistons, whatever you choose to make the farm with. Plus building time. It's basically a mob harvester, we've had them before! I've seen those 'friendly' mob harvesters made to get pigs and porkchops from pre 1.8, and now they make us full instead of healing us directly.
And also, being on FIRE without water is irritating as if you recieved any amount of damage, you're just going to die. You can eat all you want, you just die, your health regain can't always catch up. No immediate healing! So that is something to be very careful of!
