I don't think the guy who built a pyramid wants to build a bunch of machines and traps around it just to keep out some mindless NPC. That would [A] look terrible, and [B] just be an irritating waste of time when you could be out building cool stuff or exploring new areas and fighting monsters.
Minecraft should not be divide into ONLY survival or ONLY creative, it should allow both at the same time, and neither should impede the other. The survival aspect of the game should not so stupidly limit what kind of stuff you can build.
I don't know whether you're looking for solutions or trying to just be right. There are some people that like the current Enderman.

2. Most of us want both adventure and creativity, at the same time. One should not ruin the other.

I don't want to have to worry about them griefing me, I worry about that enough on the SMP I play.

keeping your stuff safe from endermen isn't a problem in normal survival world play. light + lava or water moats... or even just light everything within spawning range of you (which some people do anyway once they have an established base or want to make a spawning room). endermen could also muck up spawning rooms and whatnot, but who cares when you can't stand afk waiting for them anymore anyway?
but it could potentially cause some problems in adventure maps if they decide to pick up the wrong thing and mess up mechanisms.
You aren't restricted, you could still be little blossoming minds and still keep the Enderman at bay... I mean, if you guys think you're creative, then just engineer traps to keep them out...
Anyway, it seems many people like the added challenge of Endermen screwing around with structures and some don't. All of this could be fixed by the development team. They just need to add a box to allow Endermen or not in the world creation menu (they could add more check boxes while they're at it)
Features shouldn't be removed... there should be tons, and they should all be optional and customizable.

I love building and exploring stuff, but playing on creative is boring. It's much more rewarding to gather items legitimately and then build it. I'm not going to build a moat on every column for my highway viaducts.

There's nothing scary about that. There's nothing challenging about that. It really doesn't add anything to the game. It just poses an irritation to anyone who even remotely wants to build cool stuff (which is kind of the whole point of a game that lets you modify the entire landscape).
If a player on SMP went to your house and started taking it apart and making a circle on the ground with it all, would you really enjoy that? Would you see that as a challenge? Why do you guys get so irrationally romantic about every little kernel of an idea Notch dreams up? Some of his ideas are not that great.

It's just plain ****ing stupid, I don't know how else to put it. I can't believe you guys eat this crap up.
One thing that makes it a bit more difficult is the lack of GUI -- you'd have to spend time in a text editor to do configuration. Not too bad though, especially when the features are all easily handled by a unmodified client.
I talked lots about a "nostalgia" mod here, but somehow the thought of porting it to the server never occurred to me. Perhaps I should do a server version of it.

Endermen break your stuff, but you can prevent them from getting to it.
Creepers break your stuff, but you can prevent them from getting to it.
You build walls to protect yourself from skeleton snipers but spiders can climb over them.
You build a ledge on the wall so spiders can't climb over.
You build a moat so Endermen can't be takin ur blocks killin ur dudes.
Seeing as enderman only pick up 1 block per night avg I say leave it in. Unless your house is mostly windows or holes they aren't going to bust through your wall in one night.
If they're still a problem build a moat or a floating house or light up your territory so they don't spawn.

They should remove zombies and skeletons too, they aren't scary and are just an annoyance since I have to run back to my base after I die. Creepers should be removed too, all they are is a chore, I have to replace my blocks when they explode.
When that's done they should remove fun because it gets in the way of my living a boring existence.

I've actually seen one remove a block holding back a pool of lava, resulting in the enderman getting burned to death.
Granted I was actually observing the endermen at the time, just waiting for them to to do this.
