There's some people that aren't into building meaningless structures and instead choose to explore the awesome maps and land forms this game creates. These explorer types would like some added challenge to their game, and it's rather selfish to take it away because you want to build a glass tower.
If anything they should be unable to remove blocks marked in their material as "unable to harvest by hand." Currently they can tear apart the terrain better than a player can, it seems.

Honestly it should be employed as an option.
Having to go back and fix redstone circuitry every day and having your structures slowly decay is not optimal in most circumstances.
I would like the challenge on a single player survival world with a bunch of structures I care little for, but not on my server with large immaculate buildings, redstone contraptions, minecart systems, etc.
Destroying hundreds of hours of work is not viable. Of course, I doubt you have built anything of significance, so I can understand why you are so ignorant.

How is that even relevant to somebody who just explores?
It's just supposed to be spooky. Imagine making a minecart bridge across a stretch of land. When you walk up to it, you'll see one of the beams with a track on it gone then you fall off, huh, I wonder where it went. I think it needs to stay, they're rare anyway and what's the odds of them picking anything up near your structures.
I mean it's really bad that this should even be discussed.

Why should I restrict myself to one category or the other when my current play style in 1.7.3 works perfectly well.
Saying you should choose one or the other is like implying you should restrict content such as fighting, or restrict building.
Taking away content is meaningless, but as I said before would couldn't possibly comprehend this. You try running a survival server, people want to be creative, people grow attached to their creations. You are just ignorant.

Anyway, it seems many people like the added challenge of Endermen screwing around with structures and some don't. All of this could be fixed by the development team. They just need to add a box to allow Endermen or not in the world creation menu (they could add more check boxes while they're at it)
Features shouldn't be removed... there should be tons, and they should all be optional and customizable.
You aren't restricted, you could still be little blossoming minds and still keep the Enderman at bay... I mean, if you guys think you're creative, then just engineer traps to keep them out...

Unfortunately protecting hundreds of structures, adventure complexes (which rely on dark areas for added challenges), landmarks, etc.. is not a viable solution. I would like a way to somehow manually protect a user defined area from the endermen (a use for ender pearls?) but it is doubtful this will ever be an option.
Notch will probably make it so that only terrain generated by the world seed will be alterable by them. But we will just have to wait until then.
I don't think the guy who built a pyramid wants to build a bunch of machines and traps around it just to keep out some mindless NPC. That would [A] look terrible, and [B] just be an irritating waste of time when you could be out building cool stuff or exploring new areas and fighting monsters.
Minecraft should not be divide into ONLY survival or ONLY creative, it should allow both at the same time, and neither should impede the other. The survival aspect of the game should not so stupidly limit what kind of stuff you can build.
It doesn't seem very significant to me. They can't choose which blocks to take, they can only carry one block at a time, and they're very slow at removing blocks. Not to mention, they're pretty easy to dispatch. Realistically, redstone circuitry should be in a well-lit, closed-off area to begin with.
EDIT: But I really like the suggestion of "Ender-proofing" blocks with the Ender pearl.
