Aether is just one example. Many things like Mo'Creatures has been updated through months just like minecraft. And they don't add any game-changing elements. Just tons of new mobs and items.
I'm not saying their bad or anything. I think mods are amazing! But I just think your argument is simply not correct, as modding is often slower or adds less content then notch/jeb.

Reasons it took so long:
COMPLETELY NEW lighting engine
COMPLETELY NEW world generation including complex abandoned mineshafts, complex npc villages with a huge variety of buildings, and two new biomes.
COMPLETELY NEW mobs
NPCs built from the ground up
Notch got married
PAX
Notch helped to design the Xbox and pocket versions of the game
And many more reasons I can't think of off the top of my head.
Keep in mind that Notch and the rest of Mojang need to worry about idiot fanboys (and girls) who can't accept change; this makes it hard to release such a wonderfully game-changing update quickly.
The NPCs will be added in 1.9, as will functioning experience.

May I just add, Notch added new terrain, new lighting system, new mobs, new items. And Not to mention he got married and went on a honeymoon, He's also a very famous man and must get very stressed all the time.
But we're not seeing 5-6 days work from either notch or jeb atm. Jeb is obviously working on cobalt, we know this.
Notch is possibly working on scrolls (or being lazy) we don't know.
But this doesn't excuse them from ignoring minecraft. Minecraft is what's made them a success, they should finish it and not half ass it when they're not working on their other projects.
You're still making an assumption based on nothing but vague tweets and blog posts. The fact is, you don't know how much time or effort they put into it. You also don't know where the game is supposed to be once finished and how much time they need to budget to get there. On top of that, Minecraft may not be a priority to them, and there's no reason why they need to make it one. They've already gotten the bulk of the audience they were going to get, anyway. As a company, Mojang's future isn't Minecraft.
Notch ought to hire a few computer scientists or else sell minecraft to a development company with greater resources at its disposal. Just imagine how awesome minecraft could be if it were made by people who really knew what they were doing (technically at least, if not artistically)?

When have you ever purchased a game before with the expectation of being able to play it for free on every other platform that it's made for?!?!
Here's a real life example to show just how silly that statement is:
I bought Duke Nukem last month for PC because my Xbox 360 red-ringed and I didn't feel like waiting until I could buy another one to play the game. Well I finally got my new 360 a week ago. Does that mean I deserve to receive the game for my 360 for free? Of course not. If I want to play it on my 360, I will have to buy it again.

Then you haven't heard that Steam is getting into xbox 360. I'm not sure how all of that will work, but you should be able to play the low 3rd party games through steam on what ever system. Also says 360 players MIGHT be able to play against anyone on any platform.
So yea...This is not some BIG HUGE game like Halo or COD, this is a small time low budget game. I'm not sure how they will work all this into the Microsoft servers but if it is anything like we have now then it should be possible to play across platforms. SO...they might make it so you can pay like $5/$10 to get that cross-platform licenses so you can play on both without having to re-buy the game.

Having run a number of companies, Mojang suffers from a problem many start-ups suffer from and that is being too ambitious. In reality in a perfect world they should never have taken on multiple projects as a TINY developer and rush to become a PUBLISHER of other games. I realize that developing for xbox and smartphones is a move to RIDE the wave before it dies, but that is why I think the community feels the lag in development that has mostly been carried by plug-in developers.
Too many conferences, trade shows and multitasking. You would not normally take your whole programming team to
a PR event. This is a challenge for a company like Mojang and Notch, who not only is the figurehead but the
inspiration/visionary as well.
I think the best direction would be to get a top notch API out there and that would greatly take the pressure off MOJANG.
But as I have said, I have no complaints, just my two cents.
