I think the new hunger system is pretty well balanced and requires a little bit of thinking/preparing when fighting enemies. Before, you could just spam the mouse button to eat food and instantly gain your health back.
In light of it looking like an actual complaint, it's like I said before. Now you have to pick your battles and actually learn a thing or 2 about defense. PvP has been ENHANCED because of this. If you learn to keep your hunger full often, you'll get health regen. Then it comes down to avoidance. PvP takes MORE skill than ever.
If hunger was being REMOVED, and food instantly healed you, people would have this same complaint. That it takes "0 skill".

With the addition of blocking and the removal of instant healing, PvP has become a whole hell of a lot harder and definitely takes more skill. I actually ENJOY the PvP now. Spam swinging your sword and scrolling to eat an entire porkchop in one bite and heal back to full takes no skill. The fact that you only regenerate 1/2 a heart every 5 seconds means you need to be much smarter about how you fight. It's also not that hard to dodge someone's attack... just step backwards, duh.

Now, with slowly regenerating health and the requirement to charge arrows to get decent range and damage, you must pick your battles and learn when to attack and when to retreat.
If you hold down right-click with a sword in your hand, it turns sideways. This seems to be blocking, but I don't think it does anything yet.
1.8 has turned minecraft combat into something that requires more skill, and has left the old ways of it being an eating contest. I am very happy with the direction iti s taking, and I fully support hunger.
It would render the cave spider weaker and rotten flesh would have no use. Don't want hunger, then play on peaceful. You probably couldn't take a zombie anyway if you couldn't handle eating one cooked porkchop every 10 minutes. Oh and also, if hunger could be disable, Critical Arrow+Critical Attacks=Death.

Darktide, one of the most popular PvP servers ever, has a system where you can't eat in combat. It works fine. People like it. PvP will still require skill.
This to the max. Anyone who bribes server ops can get a bunch of golden apples and win PvP. A hunger bar makes PvP a bit more serious. Not whoever-can-scroll-and-eat-food first.
So could you explain how you stand and eat your food for 1 second whilst he's swinging and desperately trying to kill you

You don't because if you need to stop and heal you fail anyway.

It just adds a whole lot to survival, which really wasnt minecraft before 1.8.

I DO think, it should be an entire heart healed instead of just 1/2 though.

I agree with this. Health recharge seems too slow.

not really if you spam food then you run out and have nothing to heal yourself with in which case you will die.
That's right, because it takes skill to instantly heal yourself back to full while running away.
