As I've said, I can live with the snouts as they aren't much special, and add to the appearance. I'm hoping that the zombie pigmen don't get said snouts, though, as I think they look best without the distinct pig features.

if people really hate the snouts they could make there own texture pack to remove it and leave it as is. i too like the looks of the original pigs but im fine with the way they will be.

None of you obviously took any time to read most of the discussion, everything you said has been said before and I have given an appropriate response to it. The basic structure of this response is: The post is an opinion, or a pointed statement, not a complaint or a nitpick. The new pigs look ugly to me, and to others who have become attached to the look and feel of things in the game since we bought it. 1.8 is a big change for us all, and complaining about it won't make it better. But there is no harm in stating open-minded and thoughtful opinions on the matter, which I have seen only a few of in this entire thread.
I am amazed that you any of you couldn't think of something more constructive to say than these inane remarks.

Everyone should take an example from this post. It clearly states an opinion but is not scathing or inane or just downright stupid, and even offers a solution if you dislike the changes enough to want to revert to the old way.

If in 5 or 10 years minecraft's blocks are still 1m^3 i will actually crap a 1m^3 block of obsidian out of my butt. I should think everything should get smaller effectively enhancing the voxelized resolution of the worlds.

He just clearly never considered snouts, and when someone suggested them, he added them and was like "Oh, ****... that looks a tiny bit better." Adding a bit of distinction in the models of each animal will slowly but surely make each animal feel even more unique. I realize a lot of you aren't quick, but think of it like this:
Every tiny unique modeling quirk, detail, textural focus, and setting/area of each mob slowly diversifies them to not just play different, but also FEEL different, as opposed to just feel roughly like variations of the same thing with different drops. Each unique mob is ultimately a concept, and each concept is defined by a mountain of details that attribute to their uniqueness. More = better so long as it's not gaudy. And it's not gaudy.
If notch adds utters, and regrowing wool, starts making animals appear by biome, make some animals fight back (wolves) and some animals run away when attacked (sheep and pigs) and some just plain retarded (cows). Every little detail that sets them apart from each other is good. I hope we eventually see multiple skins for cows and pigs as well, and perhaps ducks along with chickens (with similar function, like the variation in trees, just a flavor upgrade).
This snout is just a drop in the bucket of the mountain of details each mob still needs to become what they will eventually be.
Now that being said, why the hell is this even a topic? You couldn't have even picked a smaller and more useless detail to discuss the intricacies of. You're one of those guys who complains about bug fixes too, aren't you?
This thread does not warrant as many pages as it has, this response shouldn't have been required to be this long, I doubt notchs total thoughts on the topic even amounted to as much as your first post. And you keep asking for explanations.
Protip: there is no real explanation. Notch barely thought twice about it, I bet. Deal with it.
Now anyways... look what you've done, forced me to point out the obvious for you since you wanted a deep intellectual conversation about the facial protrusions of pigs in minecraft...
