See'ing how trouches burn out in 1.8 and jack-o-lanterns wont (I hope) they will probably be our new light scorce....
I'm kinda disapointed at the added plant options (even if we get a cocobean tree) due to how everything runs around food now... Wheat used to be popular cus it was the highest stacking food (make bread whenver you needed to by keeping stacks of wheat on hand)
although with the rumor of breeding animals and animals not-respawning meat will be rarer so wheat will still hold perpose...
I hope there is more to food then just killing wildlife... thats just me...
(I want tomados, corn, rice, strawberries, Onions ect XD)

Torches burn out? Not very good for custom maps...
nope it's not... but at lest it makes glowstone more useful... I think it's to make things harder... also we are suposed to be getting "lanters" which will replace all trouches in game? I assume they are probably a harder to craft trouch that doesn't burn out.... but that is getting off topic .-.
what do you guys think the oversized mushrooms will be for?

Well mushrooms right now are used only for mushroom soup, so i think giant mushrooms add something else to the game : Poison. The reason i think this is because blue spiders proved there will be poison in 1.8, so I think mushrooms drop poison when smelted.

And if you watched the pax preview you could see the "vine" in the item selection screen next to iron bars.
Oh and 2 types of mushrooms
So
Melon
Giant Mushroom
Vine/moss/ivy
IS more or less the changelist for plants
Sounds like moss could be a new plant type...
