I will probably wait a day or so for emergency bug fixes to come out so that my maps are not corrupted(this also happened with 1.7), but will not wait for all the features to be added.
Most people did not wait for 1.7 because the full version of it (what is now 1.8) was not out yet; why should we now?
Minecraft 1.8.0 will still be able to load in the old maps, so there's no need to go through this long process. You will however have to head out further than you have gone to get to the new content. Adventuring to a new land is quite a good mix with the old! Also where is your #2?

Okay, even after they split the update, 1.8 is one of the biggest updates ever released. You might as well just update when the mods update.
1.9 is going to be a while, since they are adding more than just the 'second half' of adventure mode to it. Terrain changes, and probably just more content in general.

yeah i'm making a copy of my 1.7.3 .minecraft folder so i can switch out 1.8 and 1.7 as i please but having a minecraft.jar selector in the gui would be spondiferous

But why would you want to keep playing 1.7.3?
I mean you can still keep your old structures. Just tunnel through the nether to unexplored chunks.
