You say that as if lava works perfectly, which it doesn't. As it stands now you can dump a bucket of lava into already existing lava and you've just permanently lost a block of lava.

Of course it already happens with water, but if water were finite like you suggested then it would become a serious problem. My example of the lava was that you'd permanently lose water just like you lose lava right now. Typically people don't care about losing lava because it doesn't ruin the environment like it would if you couldn't replace blocks of water like you can now.
I never knew he fixed it once. I personally like the way water and lava work right now though.

My system would work perfect, it's just that when the hydration bar is full you get some kind of benefit. What the benefit would be is kind of hard to think of right now.

Boring and tedious. Its overcomplicating things more... Hunger bar is enough annoyance... they might implement thirst on the hunger bar... but as i said its going to be pointless and tedious.

this wouldn't be done, infinite water is part of what keeps this game from only being able to be run on super computers.
that being said it shouldn't take a phenom X4 or an i7 to run this game, but I've seen it even run poorly on those, I feel sorry for laptop users.

I can run Minecraft in max settings (no optifine or mods) without any lag on an old pentium 4 so needing an i7 would be a joke. xD

But in that case it usually isn't a problem with the processor but the graphics card.
What a lot of laptops are set to do is swap to the integrated graphics card whether by default, for certain programs, or when a program doesn't seem to call for it.
And Minecraft doesn't really act the same way as some huge graphically intense game does, so when laptops use the integrated graphics instead of the higher quality graphics card then people encounter problems.
I believe there are a few ways to fix this and make the game run fine on laptops though.
OT: If they made us have to drink water they might us well make us have to use the bathroom too.
It would add an extra survival aspect to a survival game obviously.

The difference between adding hunger and adding water is that hunger was added to rewamp the entire food system, as adding drinking water would be adding an entirely new system.
Personally, I hope they add a temperature meter instead so that winter tundras will freeze you to death and deserts will give you heat stroke. that would be more interesting, than an arbitrary need to jump in a puddle of water every once and a while.

I really don't see how people think this would be a challenge. It's almost impossible to find a place where water isn't visible in a minecraft world. This would add no challenge to the game, it would simply be a chore, and an extraordinarily tedious one at that. At least with food there's a fairly wide variety of food types, and different means by which to obtain them. You can farm, ranch, hunt, or fish. With water there is only one type, and only one means by which to obtain it.
