I use speed potion the most common just for getting here and there, easy to make.
Strength potion: the second most common I use, if I remember to make them at least.
Instant heal I use as splash for my zombie dungeon farm to kill them.
Regen potion? They are fairly difficult to obtain and I would only need them on enderman if I didn't already use tnt or iron armor. I don't ever use them.
Fire resist: I used them to swim in the Nether a couple times but I guess I could use them when I'm blaze hunting.
Poison: Would be nice for pvp but I'm playing single.
Instant Damage: I never use these because spider farms are less efficient. Would be another pvp potion.
Weakness: all around a waste of time unless you find a use for it in adventure map.

I don't really see the alchemy system as being any more magic than regular crafting. The actual process is all about mixing different materials together to obtain a desired effect, there's no ritual involved. They could have called it chemistry I guess, but the nature of the ingredients and the game it's self made alchemy a better choice in my opinion, in fact I think it fits better with content like swords and redstone and skeleton archers than a more sterile, modern equivalent would.
As for the potions themselves I'm not finding myself needing them much right now, mostly because of armor being overpowered. Once it's nerfed potions will be a lot more useful, especially for instant healing, and I'm sure there are plenty of uses for them in pvp.
I meant a regular spider spawner but I would probably farm silverfish unless I find 2 cave spider farms next to each other. Right now I'm just farming my zombie farm and going to the Nether to get everything for potions.

speed - getting to those far away places
Fire resist - safety whn blaze farming
Poison splash - for the lols
