I have explored the Nether lots, I have lots of materials and stuff, but I can't seem to find a Nether Fortress for Blaze spawners. I want to go into potions a bit and see how they work and I will need a brewing stand for that.
Unlike all of these lucky people, I didn't find my fortresses nearby, but I do have helpful hints.
Remember that your first nether portal is always located at x=0, z=0, meaning you can explore infinitely and still be able to easily find your way back. So get together a set of iron tools, not diamond to start with, and jury start walking around. Other options include creating a map and, although you can't see anything in a nether map, it will show where you have been.
Unless the fortresses are silhouetted against a wall of netherrack, they can be hard to spot. They're dark enough to blend fairly well with the nether fog, so reeeeaaaaally stare into that abyss as you search.

Everyone has seen the very numerous threads bashing the various features of 1.9, Notch, Mojang, etc. Can we turn down the hating? Just a little bit? Sure, everyone may not be pleased with enchanting, or potions, but really, is it at all realistic to expect that Notch will undo his work from the past several weeks and take these features out? One, that would infuriate far more players than it might pacify, and two, something like that is completely unprecedented in a game as popular as Minecraft. Complete feature removal? Forget about it. Nobody is forcing you to use enchantments and potions.

Adding an XP bar does NOT, I repeat NOT turn Minecraft into an RPG. An RPG, to quote the dictionary, is a game in which players assume the roles of characters in a fictional setting and take those characters through a structured narrative or structured decision making.

Fantasy elements are often found in RPGs, but the reverse is NOT true. Fantasy != RPG. XP bar + minor fantasy elements does not and WILL NEVER equal an RPG in Minecraft, since Minecraft is completely devoid of a plot whatsoever.

Finally, at the end of the day, you have to give Notch and Mojang some credit for what they have accomplished. Minecraft has over 3 million users. If Mojang was making bad gameplay decisions, why is Minecraft one of the most popular video games of all time? Because Mojang knows what they are doing. The success of Minecraft is testament to it.

If you build a portal at (0,0) in the overworld, the nether portal will spawn at (0,0).
(0/8,0/8)=(0,0)
You could also build the portal at something like (3,2) and still get (0,0). Depending on cave and mountain formations, you could even build the portal at something like (20,0).
In a normal map, though, the portal will be quite close to (0,0), probably not more than 60 blocks or so away.
However, if you explored a lot before making a portal, the nether portal could be rather far (probably 100-300 blocks) from the origin (for every 800 blocks away you go in the overworld, your nether portal would be 100 blocks away from spawn).

I went to the Nether for the first time last night and made a map right after I came in. I was with a friend and we walked almost straight west and saw the big nether brick archways, so we made a cobblestone path to cross a big gap, went around the mountain behind the arches, and there was the fortress. It ended up being centered right at the west edge of my Map

There can be multiple fortresses per world, so you can always try just going in one direction until you find one.
Nether fortresses are generated even if "Generate Structures" is off, so that can't be a problem.
