So if there were new ores two issues need to be solved:
1. Things to use them on.
2. Balancing out the ore distribution on the map.
For the first problem, I can't think of anything except new tool tiers. For the second problem, combining increased map height and making ores spawn in specific biomes should fix that. Of course then we would need to re-write the books of mining science in minecraft which frankly would be a huge pain in the rear. But if these problems are solved I would be one happy miner.

I think that to support new ores, Mojang would have to expand the underground level and change the ore generation. I think it would be great if underground you needed to mine and explore more. I've been to diamond layer, i've been to bedrock, lava, coal, iron, and all the other layers. If they would expand the worlds vertically, that would be so cool and would make it a bit more interesting along with adding new ores.
I think it would be cool if they had specific chunks with more of one ore than the rest in the chunk. For example a coal mine, diamond mine,or a iron mine like in real life. If they had this they could gradualy add diferent ores without making ores appear very often.
I would love ruby sapphire and emeralds, but rather than forging with them, you could use them as currency in NPC village shops. Copper would be okay too, I guess. Platinum, maybe?
I want them for sheer exploration factor. Digging underground loses it's appeal when there's only 5 possible ores to find, gold and lapiz being completely useless and half of Minecraft users never touching Redstone. The game is called MINEcraft. Give us a reason to mine. There should be gold, silver, iron, tin, copper, lead, diamond, zinc, nickel, rubies, sapphires, emeralds, and OIL. What if deep underground you hit a pool of oil just like you hit a pool of water. Make them completely scarce, make them a fuel source for smelting and others things. This game can be so much more but instead of improving what makes the game great, he is adding junk like "experience."

There is no reason to Mine once you have a set of diamond tools.
