That's how ya escape, buddy. But you forgot something. The lavafall looks solid and straight down. Bonus points for putting more lavafalls near it so it looks natural. From the outside, it looks like a dead end BTW.

Which, on a related note, is why I wish you could save the leaf-blocks you cut up from trees. They'd make excellent camouflage.
Maybe you can plant a tree, build dirt going up to the leaves, then carve out the wood and make your hideout. You'll have to enter and leave by tunnelling though. I'll have to try this sometime.

they could mine through the wall and make an air pocket, the water level will lower since there is finite water and there will naturally be air pockets all around. Finally this would work better with lava.
You attach the underground water to the ocean through a tunnel. That way it'll be effectively infinite.
And I know it would work better with lava, but that's not practical for several reasons. First, I've never seen lava aboveground. Second, you'd likely die trying to work with lava in such cramped quarters. And third, lava is finite and slow. If I tunneled under and saw lava, I would backpedal immediately and dig a trench in my trench. The lava would pool there and I would be safe.
Not to be rude or anything, I just don't like everyone suggesting lava when they know they can't get lava. At least, not if we're talking aboveground, which we have been.
Since the real water system is now in place you could fill it with water source however, placing dirt blocks to make air gaps is still an effective tool. Also lava is now easily accessible. Also we can bring underground lava to the surface. Thirdly if you backpedaled on lava and dug a trench, you would then have a lava stream that you have to replace blocks to move forward again.
Onto new business. A big determining factor for defenses now rests in the hands of Notch via land-claim flags. Depending on how much power they entitle you over your land will determine how we can actually defend ourselves. Until then we can speculate and suppose circumstances in which our defenses will work.
If the land-claim flags allow for the enemies to only mine through materials and not place them then using a floating fortress will be invaluable asset, for it would be unreachable. Except through one small pathway that can be blocked off with lava from above like so:
the players can also use minecarts to jump off the fort and be undamaged when they fall. The only problem is finding the right time to re-enter the base with out enemies following you. So a archers would put on either sides of the walkway to knock off any enemy.

If you don't care about leaving your house, you could just surround the whole thing in a shell of lava!

It only needs one lava source (the fire), and can be adapted to any size building. Using wood, you can even make the lava any thickness you wanted to like so:

This would make a seven block thick wall of lava.
If you wanted to, you could leave one opening and use it as a choke point. With a really thick wall of lava, you don't have to worry about people mining their way into the building.
Plus, I can still pillar up and scoop up your lava, take your flags, and leave
I think the assumption is that landclaim flags will not allow you to build blocks within their radius (unless you're the owner, I suppose). So you couldn't pillar.
However, that would unbalance the game towards defense. Right now it's unbalanced towards offense. We need balance.
