I tried destroying them like regular blocks, but I can't seem to. I keep placing them when I try to switch block types (I'm still not used to having "b" not switch blocks) and I have half a dozen floating around in my fort now...
And if I can't remove them then is there a way to change what they say?
That may help. I am currently in a rather large siege and out of arrows. And half the monsters are creepers that are low on health from fights with the skeletons. I don't know if I want to risk the integrity of my structure just yet...

Notch put them in just to show how possible they are.
You might be able to manually go in and delete them by extracting and examining the file but don't ask me how D:

You can still delete blocks under the sign and cause it to fall underground.
After it's down a few blocks, you can put new blocks on top of it.
