Here's mine, or at least what I think may be called "epic". It may be so, only in my mind at least.
1. Lighthouse
Here is the beginning of the lighthouse.
When I poured the lava there must have been a block that met corner-to-corner with a block of lava. All the wool burned to the ground. I couldn’t stop it, caught fire, and nearly died from a fall. I watched it burn while floating in the sea.
Here is the nearly completed lighthouse. Only the outer retaining wall needs to be expanded and finished.
2. Motte-&-Bailey (a castle with courtyard and ringworks)
This small castle is designed after those motte-&-bailey structures found throughout Britain. It has a small mob grinder below it as well as an undercroft. It is self sufficient with crops, farm animals, water, fish, and timber.
3. World Tree
It took me more than a month to construct the first limb and trunk of this massive tree. Having the leaf decay turned off was a serious slow down for this project. These pics show the early beginnings.
Here are a few photos of the nearly finished tree. I’m still stuffing the inside with wood, the roots need fixing, and some of the canopy needs readjusting. There is probably another month of work to be done before it is perfect.
I may add other things once they are completed to my liking. Show me what epic things you’ve been working on!
(p.s. if the photos don't show up then my photobucket ran out of bandwidth. come back later when it has refilled; pic collages are 1600x1200, fyi)
That is awesome. I especially like the lighthouse.. that's the sort of project I've had for quite a while. I tried to build an inland beacon tower once, but I made it with too small a diameter, and it was just a pain getting up and down the inside of it. And then the lava I had bucket-placed in the top disappeared while I was doing something else.
I think I'm going to enjoy watching this thread. Wish I had more to contribute myself!
Rollback Post to RevisionRollBack
The mine ahead is dark, the spoils hard to see,
The torchlight growing weak and I feel the need for trees,
Back once more for coal, but the walls of stone are clean,
Something in the blackness stirs, sprinting after me.

All are very good thanks for sharing them with us. Very inspiring.
That tree though is off the charts good. I loved the image from underneath and the deep shadow it casts beneath it. I'm too humbled by them to want to share my latest project. Perhaps once it is closer to completion.

I tried it with terrible results. I gave my wife my glasses for a second, a creeper showed up and now my wife is pregnant.
Stupid 3D..
Please for the sake of your own sanity never, never, never let a bucket of lava come within 100 meters of that tree.

I don't care if its OVAAR 9000!!!!!! mb... I just want it!
That canopy is one of the most epic things I've seen made with minecraft.
EDIT: To make it more epic...my 42nd post.

No hax, he had a chunk error and then hollowed it out more.

I could link you to his thread if you'd like.
This is my best attempt, though:
A fairly simple Parthenon-esque temple with an altar in it...but with a twist:
This farm above it...
allows me to sacrifice animals with the press of a button.
(Those diamond blocks were *NOT* InvEdited; I used Cartograph to find them. No hax were used in the making of this altar.)
Second (@ OP):
Great work, the list of praise is too long for me to type with my time constraints.
I would like to see albums of these, very inspiring.
When I get home I'll post a pic of my castle - which is cool but NO WHERE near as impressive as that world tree.
Currently planning out a "Zombie Survival" city with my team - 1000x1000, with each building unique. Should be cool =)
