So I am trying to set up some user activated tracks. Sadly my main bases are becoming too large and I want to stop at certain places but not use more track.
Anyways for some strange reason sometimes my practice redstone track works....then I go to the real track and it wont using the SAME setup. I am going no more than 10 blocks in length and under 15 blocks.
Sorta looks like this. (white = blank arrow = lever and rose - red torch and red = powder)

This seems to work for me but when I have to zig/zag to "hide" the job is when the problem usually happens. It will light up but the last torch wont go on/off. When I go in a "straight" line to the RS Torch it will work. What am I missing here?
There's a "bug" (Not really a bug, but an annoying feature) in minecraft the makes redstone LOOK like it's point at a block if a torch is on top of it, when in reality it's not. It has to be pointing at the block without the torch on top, and then you can place the torch. Try that.

Switch = Yellow white = nothing and track = red.
The switch being at the south track (aka north being top of diagram)
The problem is the track wont go back to "straight" once I triggered it. It will connect West-North and South-West but never North to South again. Any ideas perhaps?

Redstone can't ever make a track straight. It will only affect curved tracks at a T-Intersection. However, if a cart hits a turn it is not directly attached to, it will continue going straight.

So have a switch on each side changing the same track (so I can change from either side) simply doing the same thing on the other side doesn't seem to work though.

It depends on what you want it to do. If all you want it to do is change tracks, and in single player, that should work. just make the wiring from the second lever connect with the wiring from the first and it should work.
Well it works the issue is if one is powered on the other is as well it wont change. I dunno if its possible to create a timer or a loop of some kind to flip the switch after a few seconds so this wont be a issue.

Try changing the levers to buttons and hooking them up to an RS-NOR latch. Then place a pressure plate after the track to reset the RS-NOR latch. Hold on, lemme draw up a schematic...
Well I made a new world and did a life-size model of your diagram (box for box) and the button setup works however its a little fast. However the pressure switch does not seem to do anything and it stops my box car. It wont keep going to the next track it dead stops it even at full speed.
However the track appears to be setup exactly as the diagram shows. Every torch/powder is lit up exactly as it is on the image. The plate triggers the powder and it lights up but does nothing.
I can send you the world if you like. I am still playing 1.12 though I dunno if that would matter.

A few things:
1)Minecarts only trigger wooden pressure plates if there's noone in them.
2)Place a booster right next to the pressure plate to boost the cart past. If you don't like boosters, you can also place the pressure plate right at a curve in the track, like this:
