would it b e considered greifing if I set fire to someones house/floors/whatever so I could steal their things while they tried to put it out?

It depends on who the admin is. Personally, I would just consider this raiding. I have done this before (lol), and the admins on the server I use were fine with it. The person I did it too wasn't. He started calling me a griefer and telling a bunch of other players that I was a griefer. It all depends on who it affects/who sees it happen. usually though, It shouldn't be a problem unless you are running around setting everybody's houses on fire.

I second this. Depending on the server, it may or may not be ok. If it's a more "game-based" server then you probably wont have a problem (though you might get a price put on your head there) but if it's more a "building" server, then it will likely be griefing. it also depends on how much work it will take to rebuild. a 3-story house (that is, atleast 9 blocks high) with 12 rooms, is more likely to be griefing than a little 1-room cottage.

Thats what I thought. I figure its not greifing because it would be greifing if you just set fire to the house and ran away because you thought it would be funny to burn a random persons house down. It would be raiding/theft if you used the fire as a distraction while you robbed them blind.

As people have said, totally depends on the server/admin. I know some servers where that would get you an instant ban, both for stealing someones stuff AND for starting fire, either one is a ban worthy offence. I know some servers where burning down other peoples stuff for fun is totally acceptable, regardless of motivation.
