I have talked to all the players (10 of them) that play in the server I have and they all said that they are perfectly fine with it, though half of them preferred that I only do it if health works.
Everybody on the server I play have agreed to generate a new world as the benefits of the update outweigh our previous works. A few want something or the other preserved as a .schematic but the uncertainty of the map editors functioning or not is a factor on that plan.
Overall it's no fun for now as everybody stop building new things and are just waiting for a new map.
Assuming you don't have access to hosting two separate servers (one with the old map, one with the new), I'm thinking that wiping the server would be most reasonable, because there's no reason to play an outdated version of a map, anyways.
Then, if you feel like it, compensate the players who have worked incredibly hard on the other map with many building materials and maybe a diamond tool kit to start out with. Depending on the size of your server, you could also "rank" people on how much they have contributed and give them an amount of materials based on how much they have contributed.
I have a small player base and none of them want a reset. I promised that we'd see if we get any interesting biomes nearby (they've explored a good bit so far) on the current map and if not, I'd backup the map and generate a new one. If the new one isn't what we are expecting I can always put the old one back up. My server has only been up about a month anyway so they won't be losing all that much progress.
We're pruning the unusued (over explored) chunks, and letting the new Biomes generate.
If there is an interesting Biome, I will create a portal to that area from our starting point, so people can easily get established in a far away interesting new place.
If everyone wants to transition to the new area, I'll also move the spawn point there.
My server is going to reset, however all players are having their inventories brought over. Some admins are also allowing people to claim stuff that they have in chests with screenshots and spawn some stuff so they're not completely without stuff.
