-split "Mobs killed" into a statistic for each mob type, there's a big difference between killing a pig, and killing a zombie, and killing a ghast, and itd be nice to know how many of each I've killed
-add ingame time past, not just real life minutes/time played, would be interesting to know how many minecraft days have passed, and minutes played doesnt go in minecraft days and doesnt count nights you sleep through

The main way I can think of to track number of days would simply be number of sunrises, since sleeping wakes you up at sunrise and I'm guessing it's not hard for the game to register when a new sunrise starts and add to the number of days counter.
Tracking damage done to what mobs is nice too, and now that I think about it, the damage done by each mob to you would be nice to know as well.
Actually, might be nice to know how many times certain mobs have killed you, and how many times you've died certain ways.
So other new statistics:
-Damage done to X, where X is each mob type
-Damage done by X, where X is each mob type
-number of deaths by X, where X is each mob type, falling damage, drowning, burning, lava, etc.
Then you could see for instance that you had 100 deaths to skeletons and have numbers to back up your hate of skeletons heh.
