If bedrock has a unique sound, it wouldn't be hard at all (You could just try and trigger the achievement when the sound plays). Otherwise, it might be kinda hard (Although, still, it's not really that hard), I don't know.
For an example they (Mojang) could program bedrock to act like a pressure plate where when only the play touches bedrock, it activates the achievement. =) I am sure there are other methods.

I assume you mean they jumped from level 128 and hit a bedrock on level 1 without dying.
